  • Chicken al mattone - which means under the brick - is a classic Italian method of cooking. It gives the chicken beautifully crisp skin while keeping the meat super tender and delicious. It’s served up with a rich pizzaiola sauce - tomatoes, oregano, olives and capers are teamed with the uniquely sweet and spicy Calabrian chilli for a bit of a kick. Available now!

      he cares so much about the food he cooks that you only ever get 25% of the dish when you order there......small portions and over priced thats why i stopped going there....dont get me wrong i love the food but the price is not worth the amount you get

      funny, i don't remember talking at all about his restaurant, nor do i care how you feel about his portion sizes. i would have said the same no matter what room he films his videos in, as he acts the same regardless. however, luxury restaurants give you one forkful of food for $100; if you don't like the price point of a place there's a million others to go to. if you prefer lower quality ingredients at a lower price, then good on you. find your comfort zone and stick to it. what's the point of complaining on a youtube video, in a reply to someone else's comment about a totally different topic, about a restaurant not fitting your personal preference? such a waste of time.

      A k i I think for a main course, having one chicken breast in some sauce wouldn’t be fulfilling. I think there would need to be some carbs in there or perhaps some veg to fill it out a bit.

    It’s interesting , he cooks real , authentic food , with great ingredients with staff whom he treats with respect and a cheerful collegial manner.
    Not one F bomb , not acting as if he snorted 200 pounds of Methamphetamine as he frenetically sharpens his knife whilst fixating on his pompadour.
    I’ll take Mr Oliver’s cuisine over the litigious hateful other guy

      to be fair jamie is probably in his restaurants to shoot these clips every once in a while and thats it. and to be honest if u pay attention to these clips u quickly get the feeling that jamie is out of the restaurant chef business since so long that nowadays he'd probably be more in the way than he'd help even if he did actually try to work in the kitchen again.

    no wonder Jamie's Italian shut down lol. Are you serious James? Best moment when Jamie is talking and the "strong guy" adjusts the so called brick. And Jamie is making garlic, oregano, olives and some chilli into a special sauce like it's a wonder of the world and he knows this cause he even compares it to peri peri like it has anything to do with it. seriously??

      Willie Mostert I loved my Foreman grill. It was hotter on one side than the other. I would have to flip the meat though.

      This isn't the same as a contact grill. This method allows you to cook on an open flame and at higher temperatures.

    Loooks great. Names of the dish seem to very. Piri chicken is Portuguese. You are mixing Italian with that. All cool.
    I recommend you create your own names for recipes. You have the ability to do so.

    More juicyness when you put a brick on top? Are you not pushing the moisture out that way? Just wondering...

      Moisture traditionally moves away from the heat. By heating on both sides, you push the moisture to the center. He also mentioned that they let the chicken rest for a little while. This allows the meat to relax, and the moisture to travel back to where it came from, making the whole piece juicy again.

      if you were paying any attention the point of the brick is that you can still grill over open flame. Infinitely better than a shitty contact grill created for people who don't have a nice grill or bbq.
