That's it. Obviously, this must be made outside (at the same time avoid odors in house) and additionally you must buy some good quality coal. Add sardines on a slice of homemade Portuguese cornbread accompanied with a salad of red and green roasted peppers with onions, olive oil, white vinegar and you have a simple and authentic Mediterranean meal. Don't forget the red wine. Could be Cabernet Sauvignon or Touriga Nacional. 5stars. Enjoy!

Bart, you're so right in your opinion in not overpowering the fish with other flavours: let the natural taste of the fish prevail! Even when I cook salmon or kabeljouw I also put just a tiny little bit of salt, pepper and olive oil: not too much, just a little bit to bring out the natural taste of the fish. A small sprinkle of fresh herbs like thyme or dill won't hurt either, but not too much!
I haven't had good fresh sardines since I was in Europe 30 years ago. They are so good but hard to find where I am at...if at all. Always do head on for any baked fish even if you are squeamish you will get used to it and the flavor is much better. These look really good....thanks Bart :)
I just made sardines. I used your descaling technique. So much faster than trying to do it with my fingers. I didn't add any salt or pepper. I find sardine salty enough. Pepper might have been good but it's just so tasty as it is.

The fish should be soft so you can just take it with your fork and knife from the fish.if you found any bones in your mouth just make a little pile of bones in your plate,just spit it out
Is the head eaten? Think that means gills are also still in. I've always removed head behind the gills but will love if I don't have to remove heads, more food!
I'm from Casablanca, Morocco but I live in Canada. The secret of sardines you don't need to wash it, is better from the sea to the oven street you can put only salt in the top extra salt then clean when you are eating and don't eat the skin and estomac and that stuff and you are eating you can add little bit lemon and enjoy it with a cup of Moroccan tea or orange juice 😊👌

You are the first person on here that I saw scale the sardines I don't like scales on my fish . I can't see why the other cooks didn't scale theirs cause the scales are big

Do you know of any Canned Sardins which has the Head intact? :) I'm thinking if the bones are eatable in the canned foods, the head should also be and they might be healthy.
