This is fantastic. Cooking quinoa correctly is key. Glad to see Chris made that point. There's too much mushy Quinoa in the world - even at fancy restaurants. It should pop in your mouth. I love this salad. Great video.

Cold weather is literally for lettuce. They don’t grow well in hot climates and thrive in the cold. Sweeter flavors in your letti will be a direct result of the cold.
Great salad, but to be honest, if I make that for myself during the week I cut the salad in bite size pieces before the dressing goes on. I am way too hungry at this point to cut each leaf during eating.
I’ve never bought radicchio because it seems so much more expensive than other salad green options, and I couldn’t imagine it being much better since salad is more about the toppings and dressing. I guess I’ll have to try it, I hope it’s actually better somehow than regular salad greens. Arugula is supper different, maybe radicchio is too

I'm surprised by seasoning the salad well and then putting some dry unseasoned quinoa over the top.. and for this flavour combination I'm not quite sure about the cilantro. Only way to know is to make it and try though!
I don't know why, but in my country, Radicchio can only be found in those pre-packed green mixes, and not as its own thing as a whole. And I love radicchio :(
I have a quick question for Chris here - and I anticipate hate coming my way, but ‐ Chris, do you think this salad is one that is accessible to a larger crowd or just a certain tier of the society. I do not know how expensive this may be in America, & I'm open to someone breaking down the price point for me, but really, how accessible is it for people who want to eat good salads but cannot afford ingredients like this.

To me any sweet dressing perfectly balances the bitterness of radicchio. But I also enjoy bitterness in a lot of food so maybe it’s not for everyone. You can probably roast it to bring out sweetness if you’re sensitive to bitterness.
This may be an unpopular opinion but I made the bas making perfect Thanksgiving salad it had radicchio the salad was great but I hate bitter gross radicchio when I made that salad don't understand the hype. Maybe shocking it in cold water first ? I dunno man.
Shade for shade: I think hazelnuts are THE WORST nut by far. As a kid I would immediately spit something out that had hazelnuts hidden in it. As an adult I will politely finish the bite I took and eat no more of it...maybe find something to get the awful taste out of my mouth. All other nuts and seeds are good to great. Peanuts (I know it's not a nut) and Pistachios are top tier for me. Hazelnuts😒...hard pass.
