The FDA is constantly approving super shady chemicals along with giving us essentially death potions in the form of energy drinks. I'd say the reason why gutter oil is so prevalent to us Westerners I'd a mixture of propaganda and China's population density being so high. Hence we can see more cases of malpractice than here in the West.

Although Hanzhong is located in Shaanxi Province, it is divided by the Qinling Mountains from the capital Xi'an, and its culture is closer to Sichuan in the south west China. People there speak Sichuan dialect and food there like Sichuan cuisine with more spicy

Hanzhong is considered to be a critical city for sectional dynasties of ancient China. So glad to have Mark in Hanzhong, love from HK!❤❤❤

@@lillustpotion not exactly 8 dishes. its 8 different branches of dishes. however, the 3 biggest branches are SiChuan Dishes (Chuan), Shandong Dishes (Lu), Huaiyang. SiChuan Dishes are famous for its spiciness, Lu dishes are the royal cuisines. Huaiyang Dishes is also delicate.
@@lillustpotion Not many foreign vlogers have tried these dishes cuz they need to be eaten in a proper restaurant with at least 6 people. otherwise you cannot experience the whole thing. normally we have 4-6 cold dishes for starters, 8-12 hot dishes for the main course (at least one fish dish, one pork dish, one beef dish, one chicken/duck dish each, at least one vegi dish). we finish with 2-4 dishes for carbs(dumplings, baozi, rice cake...) and 1 soup dish and 1 fruit plate. For a tourist, very few of them have posted this kind of food.

That Michael seems like a great guide. All the places he recommends are like these tiny hole in the wall restaurants that somehow all the locals manage to find. Plus they all serve really unique dishes and its great to watch them prepare those. Many of these places I would have just walked past while having no clue what unique things are happening behind these unassuming facades.
Shanxi chilli oil is more on the aromatic side, not very spicy. When you are in Sichuan, Hunan and Hainan, please be very careful, especially in Hainan, when you come across with the yellow colour chilli paste, they are made from yellow lantern chilli, the most spicy kind for it's highest capsaicin concentration among all kinds of China.
So Hanzhong is now on my bucket list. I'm just not sure if I could do it on my own. Are there guides that can show visitors around and show the places safe for westerners and yet still get the local foods?

Its more likely to be the numbing. the sichuan pepper goes to the throat and cause the cough.
