    BETH’S RASPBERRY ALMOND THIMBLE CAKE RECIPE
    Makes 24 Thimble Cakes (or 12 regular sized muffins)
    INGREDIENTS
    ¾ cup (180 ml) of melted unsalted butter
    ¾ cup (150 g) sugar
    2 eggs
    ¼ cup (60 ml) water
    1 tsp (5 ml) almond extract
    1 ½ cups (180 g) all purpose flour
    2 tsp (10 ml) baking powder
    1 tsp (5 ml) salt
    ¼ cup (60 ml) raspberry jam
    ¼ cup (60 ml) sliced almonds
    1-2 tbsp (13 g) of powdered sugar for garnish
    METHOD:
    Preheat oven to 350F/(176C) degrees.
    Spray a mini cheesecake pan with baking spray. Set aside. (you can also use a regular cake pan, or turn this into muffins too)
    In a large bowl combine melted butter and sugar. Mix well until combine. Then with a wire whisk whip in eggs, whisking until combined. Add water and almond extract stir well.
    In a small bowl combine flour, baking powder and salt whisk until combined. Add flour mixture to wet mixture, stir gently.
    Scoop out batter into wells, filling about half way. Pipe raspberry jam in the center. Just a small dollop. Top with almonds.
    Bake at 350 for 22 mins. Allow to cool and dust with powdered sugar. Serve with a cup of tea!

    I absolutely love your style. You are fantastic at cooking and baking. On my me time I hide and binge watch your videos. My biggest rave review from friends and family was when I made your cheesecake recipe and the lasagna with the white sauce. ( sorry I can't think of the proper name off hand. lol)

    Beth...these look so sweet! I have a question. In the video you are using only one pan, which makes 12 little cakes. The printed recipe on your site says that it makes 24. Which is the correct amount, please? BTW....love your gardening channel also!

      +Joann Jacquin oh sure the batter makes enough for 24 cakes so I just bake in 2 stages. Since they are so tiny they disappear pretty quickly ha! So for a gathering I usually make the full 24 :) but you could also easily split the recipe in half to make just 12 :) so glad you like the gardening channel too! That's another passion for me :)

    Hi Beth, would the recipe work if you substituted almond meal for the flour?

      H Chong I've tried substituting ½ of the flour for almond meal and it worked great. However, when I tried 100% almond meal it was a disaster. So I would say ½ and ½ is the best alternative. I hope it helps!

    Where do you store all your bake ware and kitchen items? Every video has a new and different pan, tin, tray, stand. Your kitchen must be huge. I can't wait until I have a true kitchen of my own and not an apartment kitchen ;-)

      +Kelly Hutchinson ha ha your comment just made me laugh out loud :) because it's always a big discussion at our house "mommy no more kitchen things!" It's a popular refrain. Sigh...it's definitely my weakness, where some women collect shoes I collect kitchen things. Unfortunately my kitchen has really limited storage space so these things are stored all over the house! In armoires, closets, chest of drawers and then there's the garage. Ha! But for me we eat first with our eyes and these little cake stands, platters, boards and tins add such enjoyment to the food experience and make for great props in my videos too! I like to switch it up so you guys have beautiful things to look at that hopefully will inspire you to make the recipes :)

      I completely understand. I too have a weakness for "kitchen things", but simply don't have the space to have everything I truly desire. I love everything about your style and videos. I have made/baked more and acquired more knowledge from you over the years of watching. I appreciate your clean, elegant style from both your channels.

      Jam has seeds and jelly doesn't :)

      More specifically, jam is made with the entire fruit (pulp and all, though in some cases the seeds are strained out), whereas jelly is just made with the juice of the fruit. I've always found jam much more tasty. :)

      +Loopylu005 ha! Yes we like our jellies too :) especially when combined with peanut butter and thrown into a sandwich ha! Jam has more of the pulp and seeds of the fruit where jelly does not but really you could use either one for this recipe :)
