    My mother bought cazuelas in Nuevo Laredo, Mexico 40 years ago. Since it was not her culture, she didn't know how to cook with them. I recently inherited them. I now live south of Mexico on the Yucatan peninsula in Belize. I am curing them and will be using them for my frijoles and pollo tinga... and learning many more dishes! Thank you for your instruction.

    Thank you so much for posting this in English. I have reviewed other videos in Spanish and was able to get the gist of what needed to be done, but some of them gave directions for using vinegar and baking soda as well. Not sure what the difference is in which technique is better or for what purpose.

      Hello Jan, each region of the country has its own customs about some things, and that applies to cure a clay pot. I have never seen someone cure a clay pot with vinegar or baking soda, but I bet some people must do it.

    Great video, I picked up my cazuelas just outside Mexico city in a small market. I was not aware that you had to do this. Thank you. Do you only have to do this once or all the time before you use it? p.s. love your website too.

    Where and how do you store all of your clay ware? I just bought a bunch and have no idea where to put it in my kitchen along with all of my other cazuelas /ollas 🙃

    Hi, my cazuela is leeching out oil when heated, is this normal? both on the glazed and unglazed parts. looks like it absorbed oil from cooking.

    i just finished curing my new pot and theres a bunch of little, white, dried cracking on the glaze on outside of the pot and on top of the lid. is this normal?

    I got a glazed pot ,is it safe to cook with! Does it have to be seasoned even though glazed. It doesn't say where it was made.

      Hello Vanquish Cooking, usually the lids are not cured, but if you want to do it, you can only submerge them in water overnight. The next day, you wash it with dish soap and rinse.

    So my pot is glazed on the inside but now the outside. The outside feels rough. Do i follow the same steps or do I need to do something extra?

      @@AulesHammer Just be sure that you use the clay pot on a gas stovetop, not on a ceramic top, and use moderate heat. Some glazed pots will crack if you use them over high heat. Clay pots are really good at conserving their heat.

    What if the olla is for coffee? Will it taste like garlic? Or does that all bake away?

      For an olla that will be used for coffee, only wash it well, and gentle simmer water several times on it. Make sure you do not turn the heat to high-heat to avoid cracking the pot.

      Hello Cathy,
      you need to use a heat diffuser to be able to use the clay pot on an electric stove. Otherwise, the pot will break.

      Hello Rosifowler. Fill your sink with water and leave them there overnight to soak. The next morning, wash and rinse them.

    Hi just wanted to know if they’re safe I bought some and on the bottom has a sticker besides hecho in Mexico also says contains lead . And it looks like the ones on your video. Are they ok one says made in Mexico ) only the other said contains lead 🤷🏻‍♀️

      Hello Veda, the ones in the video are from Mexico and come with a sticker that says Safe for cooking. You can still cure your cazuela and boil water several times. Then cook some rice, just plain white rice with water, this will be to taste if the cazuela has been cured well. If the results look good without any weird aroma, then you are good to go. I know there are some kits sold online to taste is there is lead in these pots.
