Back in the 1960's & 1970's, when I was growing up, I used to help my mother bake fresh bread every Money night. She always used fresh yeast, which she purchased from the gourmet deli section of a local department store. I don't think it was "compressed" yeast, as it did not look like the compressed yeast in the above video clip. It was usually a light grey in colour, & looked like, & had the texture of very soft plasticine or play doh. A small amount of it would need to be blended & "creamed" with a teaspoon or two of sugar in a small cup, using a teaspoon. As the sugar was "creamed" with the yeast, the mixture would turn into a runny liquid, before it was then added to the other bread-making ingredients. Using this fresh yeast, we always enjoyed delicious freshly-baked bread on Monday nights, & also for the rest of the week.
Ivanna Miretti My mother-in-law said the Public Supermarket bakeries sell fresh yeast, but that was the one market in town that I didn’t ask, so I don’t know for sure. I order mine from New York bakery, which makes one pound cost about $23., so I am looking into Public’s when I run out. I have written Amazon’s Customer Service about possibly adding Fresh Yeast to their offerings. With everything else Amazon has, I don’t understand why they don’t offer it.

Woodmans grocery store carries it sometimes. It is located next to the butter, in the refrigerator section.

I am using a conversion from another site, For every 2.11c Bread flour use 25g fresh yeast.
