That casserole looked really good. It is hard to cook for just two, and not have a ton of leftovers. I learned a long time ago I needed to cut the amount I cook down to servings size of 4, that is plenty for us to eat and have a small amount leftover for lunch the next day. Yes, I should have learned that a while ago. I am realizing that I have a lot of "bits and bobs" in the freezer. One portion of chicken, or taco meat or... I'm tired of all that. More videos like this will follow.
