HEALTHY DINNER ROLLS RECIPE
Ingredients:
1 cup old-fashioned rolled oats (90g)
3/4 cup buttermilk (180ml), for soaking the oats
1/4 cup unsweetened applesauce (65g)
3 cup spelt flour, or whole wheat flour (360g)
1 tsp salt
1 packet instant yeast (7g)
1/2 cup buttermilk (120ml)
1 tsp agave or maple syrup
1 egg
sunflower seeds (for topping)
NUTRITIONAL INFO (per roll):
145 calories, fat 2.3g, carb 28.4g, protein 7.3g
Instructions:
In a mixing bowl, combine the rolled oats, 3/4 cup of buttermilk, and unsweetened applesauce. Stir to combine and allow the mixture to sit for 15 minutes, allowing the oats to absorb the liquid.
In a large mixing bowl, combine the spelt flour (or whole wheat flour), salt, and instant yeast.
In a separate small bowl, whisk together the remaining 1/2 cup of buttermilk, agave (or maple syrup), and egg.
Pour the wet ingredients into the bowl with the dry ingredients, along with the soaked oats mixture. Stir with a wooden spoon until the ingredients are evenly incorporated.
Transfer the dough onto a lightly floured surface and knead by hand for about 10 minutes, until the dough is smooth and slightly tacky. Avoid adding too much flour during this process. Alternatively, you can use a stand mixer with a dough hook attachment.
Grease a large bowl with butter or cooking spray, then place the dough into the bowl. Cover the bowl with a clean kitchen towel or plastic wrap and allow the dough to rise for 1 hour, or until it has doubled in size.
Once the dough has risen, punch it down and transfer it to a clean surface. Divide the dough into 12 equal pieces, roughly 75g each. Shape each piece into a small ball.
Grease a 10-inch springform pan or a 13x9-inch baking pan. Place the dough balls into the pan, leaving some space between each roll.
Cover the pan with a clean kitchen towel or plastic wrap and allow the rolls to rise again for another 45 minutes to 1 hour, until they have doubled in size.
While the rolls are rising, preheat your oven to 350°F (180°C).
In a small bowl, beat an egg. Brush the tops of the risen rolls with the egg wash, then sprinkle sunflower seeds on top for added flavor and texture.
Place the pan in the preheated oven and bake for 25 minutes, or until the rolls are golden brown and cooked through.
Once baked, transfer the rolls to a wire rack to cool slightly before serving.

Can I use high protein milk instead of butter milk and add olive oil for 2-3 spoons?
Sure, that would be just fine.
Delicious 😋 😋

Can you make a lentil bread?
Love the idea, I'm on it!
Yes please!
Looks delicious! Is there a vegan alternative to buttermilk? Can I use almond milk and some vinegar as an alternative?
Hi, thanks for your feedback! Yes, making your own dairy-free buttermilk would be just fine.
Can you freeze the baked buns?
I wouldn't recommend that, I tried keeping mine in the fridge for 3-4 days and they ended being pretty dry... but like with any other bread dough, it's better to freeze the dough right after the kneading process, then let it rise and bake the other day.
@@HowToCookSmarter that will even better for my chronically overfull freezer 🤭
Will this work with oat flour too?
I tried this recipe combining oat flour and spelt flour in 1:1 ratio, it was delicious too, but they weren't that fluffy... so with oat flour only, the texture would be quite different, but still delicious, there's no doubt about it.
Can you freeze the dough at some point or would that ruin it?
Yes, that would be fine, just do that right after the kneading, and when you're ready to bake let it thaw at room temperature and then give it a rise before baking.
@@HowToCookSmarter Thanks! You're awesome =)
What can I add If I font have buttermilk in my country? Maybe Greek yogurt?
Hi! Adding Greek yogurt would be fine, maybe to thin it up a bit with some water, just in order you don't end up with dry out dough. But you can make your own buttermilk by combining milk with 300ml milk with 1-1.5 tbsp lemon juice, let it sit for 5 minutes, and you're good to go.
@@HowToCookSmarter thank you
What can i use instead of apple sauce?
You can just add more buttermilk.
Can I use Greek yogurt instead of apple sauce?Like to try it.
It already has buttermilk (which is similar to yogurt), so I personally wouldn’t unless it has already been tried and found to work well.
Sure, can't go wrong with that, or just add more buttermilk.
@@HowToCookSmarter Thank you
For vegetarian, what can be used in place of Egg? please advise
Mix flaxseed powder with water. Google that for the ratio.
Hi, you can use 1/4 cup applesauce instead of egg.
👍👏🙏
Love the recipe! I find that your talking is too fast though. It makes me anxious! Why the rush?
Hi Gisel! Glad you like the recipe! I appreciate your feedback about my voiceover, I definitely want to improve that part of my content creation process.

Is spelt any healthier?
Yes, it has more fiber, it provides more minerals than all-purpose flour and it comes with lower glycemic index, but using whole wheat flour would be also fine.
Yes! Spelt is an ancient grain! Sooo much healthier and more flavorful than modern wheat.
Btw, Sasha used white spelt. "Spelt" typically refers to the wholemeal version, and white spelt is the, obviously, white flour version.
