One of your very best cooks. Everyone nails ribs, brisket, etc. Average Joe has no idea how amazing properly prepared salmon (and other fish/shellfish) taste. Healthy as well. Have tried somewhat similar cook with mesquite here in Texas with mixed results. This will be next Saturday supper.

I honestly do NOT like salmon, but my sister in law came to visit last fall and fish is the only meat she will eat. So she grabbed some salmon fillets and I smoked them in the drum and basted with a 50/50 mix of honey and sriracha. Can honestly say I would cook and eat that again myself. I just cooked on the grate, no cedar planks.
I just pre-ordered a Wildfire 4-in-1 grill and it has an "asado zone" rack that can adjust height. Should I try to make something like that lid to collect smoke over the rack? I can't wait for the delivery date, the other 3 functions are an 1,100° pizza oven, a conventional kettle style grill and a warming zone over the lid. So I should be set for gourmet Pizza, seared steaks, fish and all the typical grilling.
Looks great Greg . Love your videos and use many of your recipes and techniques. It seems like you got away from the people who have one or two grills . It seems as though you do more videos on the grills most people don’t have . Please don’t get me wrong I will continue my support for your channels. I just feel like the fancy grills have taken over your channel.

My mouth was watering while you were zesting the lemon! Is the fish moist because it was being steamed by the cedar smoke while cooking? Could you do this with chicken breasts? Great video. I shared it.
Very nice video, the salmon looked awesome. I am interested in getting one of those grills myself but honestly I an unclear about the differences between the Argentine grill and the Santa Maria. Seems like you can pretty much do anything on that Sata Maria grill. Thanks

Frozen fish done right, is superior to the so-called "fresh fish" available from most super markets. To me, almost always this fish does not smell or taste fresh. Lower scrap rate with frozen fish, too. The scrap rate is unbelievably high in fresh fish corporate supermarkets. Indicating how inexpensive they are purchasing their "fresh fish." This comment from a lifelong trout and salmon fisherman. Of course truly fresh is best.
Truth being told by the time you get fresh salmon in your market it’s on the old side maybe good for sushi. The myth that salmon will puddle after being frozen is just that a myth

Yes, directly over the coals. I like to sprinkle mine also with fresh dill and towards the end of the cook, some butter pads.

Actually you can, it is a matter of learning how to manage your ember bed and adjusting the grates as you cook for the perfect results.
