How to Smoke Cedar Plank Salmon On a Griddle for Beginners

This video shows how to smoke a piece of salmon on a cedar plank on top of a griddle.
Always exercise caution and safety when handling raw meat as well as using your grill.

Process:
1. Cut piece of salmon no wider than the width of the cedar plank
2. Pat dry salmon with paper towel
3. Place on cooling rack and into refrigerator overnight, uncovered, to develop a pellicle
4. Place cedar plank in a sink of hot water for 15 minutes-remove then dry excess water off
5. While cedar plank is soaking, apply your binder of choice to the salmon
6. Apply a rub to the salmon
7. Transfer the salmon to the dried off cedar plank
8. Place on top of 400-degree griddle and cover
9. Cook to internal temperature of 145 degrees-add a pat or two of butter about half-way through the cook
10. Remove at IT of 145 degrees and sprinkle parsley flakes as a garnish
11. Rest for five minutes
12. Enjoy!
