Sweet & Spicy Cedar Plank Salmon With Cedar Smoked Mashed Potatoes Grilled On The Weber Kettle

  • Grilled Salmon is a fantastic dish. But Salmon grilled on a Cedar Plank is on a whole other level of tastiness. And when you add some Mashed Potatoes to those planks, the meal that you end up with will knock your socks off.
    Dry Rub/Dry Brine Ingredients

    Tried this recipe and cooking method two years ago, and this is the only salmon recipe we have used since. It’s really good and easy to follow. Sometimes, we just do the potatoes. Sweet potatoes also work well.

    Tried this recipe for 4th of July cookout. WINNER!! Would definitely used wood chips next time to give the potatoes more flavor, but the recipe is great. THIS is what you cook, when company is coming for dinner! Prepare it the night before, and cook it up an hour before you eat.

    I was the lucky person that got to enjoy some of the salmon. It honestly tasted like butter. I really liked the combination of that ghost chili with the brown sugar. Best salmon I’ve ever had.

    Another great video. I've dry-brined salmon for years for smoking, but never done it when I cook it just for dinner. Looks delicious and I think leaving the dried brine on it for flavor is a good idea, especially with the sugar/salt ratio you used.

    Wow Ry!! Thank his was one of the most amazing recipes I’ve ever tasted. You were on point with everything. The Smokey flavor from the cedar plank was perfect.     I think salmon only needs a hint of sweetness, so I skipped the sweet rub. The glaze is perfect. I tried sweet potatoes instead of "regular" potatoes. A funny thing happened - the recipe I used was rather meh but after the smoking process it was an amazing transformation. I would have never thought of cooking mashed potatoes on a cedar plank. It's a winning idea.

    Bro my mouth is literally watering right now. Using a cedar plank is the only way I grill fish. Just something about that aroma that really make a difference. Going to have to try the brine next time.

    The timing of this video couldn't be more perfect. I picked up some salmon today (well, yesterday technically since it's 1am) that I'm planning on grilling today and have a cedar plank to use. On the weber kettle of course :) One thing I noticed you didn't mention though that I think might be helpful - how were your vents (both exhuast and intake) set, and what temp was the grill running (either shown via the built in thermometer or an external one). Love your videos, thanks!

      Thanks! For cooking on the plank I don't look at the kettle temp since it's direct grilled. Pretty hot, I guess :)

    Really looked good, Ry. Curious if any smoke would have had an effect, also can you use the planks more than once? I've never tried cooking with them.

      I only use them once, and the cooking time is so short that I'm not sure another smoke source would do much :)

    Hey Ry.... my new Weber kettle arrived and it's all assembled with the first cook out of the way. I now want to do the cedar plank salmon exactly to your recipe. How did you set the vents on your Weber kettle?
    Update: Nevermind... I saw on one of your comments you said you used a hot grill, vents wide open, and cooked the Planks on direct heat. You also mentioned in the video that you use 3/4 of a big chimney. I think I'm ready to go for tonight... The salmon is marinating, the glaze is made and the mashed potatoes are about to be mashed!

      @@CookingWithRy The salmon and potatoes were out if this world! The cook was exactly the same as yours... 10 minutes with the lid on, then check the temperature. They almost matched your temps exactly, then five more minutes after the glaze and off they came at 135 to 140F.
      We purchased small cedar planks she found at Sprouts so we could only fit the salmon on them. I got creative and put the mashed potatoes in foil Bowls on the indirect side with the compound butter. They came out great... With a little bit of singeing on the edges of the potato with a great wonderful flavor.

      It’s such a short cook I just left both vents full open with 3/4 of a chimney of charcoal and didn’t worry about temp :)

      Not always. I often leave the skin, especially on red or Yukon Gold potatoes.

    I Only have a quesiton, When you say butter, is it madre from Milk or from pork? I ask that cause i might have seen two types of butter

      It’s regular dairy butter from milk.

    Great video Ry. I plan on doing this this weekend. I have a question. One of my guests does not like salmon:-( what are your thoughts on doing a haddock the same way. Or should I spice it differently?

      I'd maybe add tiny bit more pepper since haddock, to me, is a milder flavor than salmon :)

      Ry, I did your salmon tonight and the one piece of haddock. The one who had the haddock tried a piece of the salmon and loved it. We made him a believer of smoked salmon. He had only ever had canned salmon. :-p

      In the rub a lot of it absorbs and contributes to the glaze when cooking.
