Ingredients:
4 C rolled oats
¾ C walnuts, chopped
¾ C pecans, chopped
½ C raw, unsalted sunflower seeds
1 C Craisins
½ C liquid coconut oil
½ C maple syrup or honey
1 tsp. vanilla extract
1 tsp. kosher salt
1 tsp. pumpkin pie spice
*Note: I used all organic ingredients
Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.
Add your oats, walnuts, pecans, sunflower seeds, salt, and pumpkin pie spice to a large mixing bowl.
In another bowl, whisk together coconut oil, maple syrup or honey, and vanilla. Pour this mixture into oat mixture and stir until all ingredients are coated. Pour onto the prepared baking sheet and spread in one even layer.
Place the baking sheet on the middle rack of your oven. Bake for 22-28 minutes or until golden brown, stirring halfway through. Take out of the oven and cool completely. Stir in the Craisins once cool. Enjoy!
This will stay fresh in an airtight container for up to 3 weeks.
