It looks like most of Kuttenberg city we see today is from the 1700s/1800s. But it's cool to see the street patterns still match up with the 1400s and to also have a very realistic depiction of what was there in the late medieval period.
Gothic cities burned down many times. Since 17th century stone and brick building prolifered, at the and of 18th century first mandatory building codes with fire protection measures were introduced. That's why most of cities in the area of Austrian Empire had late baroque face.
Yeah same with Prague, mostly Baroque architecture surviving. Combination of fires, wars, and the aristocracy deciding to demolish and rebuild cities on a whim. I find it very sad how little Medieval buildings survive, Baroque just doesn't do it for me. However there are plenty of towns and parts of cities in other parts of Europe that are still Medieval or look very similar to how it once did.

To be fair, it used to be more diverse back then - the city was mostly German at the time, but there were obviously also Czechs moving there from surrounding regions, and also other European foreigners including various mining specialists. This changed dramatically during the Hussite wars when Sigismund's crusader army took the city and then burned it on retread from advancing forces of Jan Žižka. During these events most foreigners left the city (allegedly, some specialists were taken forcefully to prevent hussites from restarting the mining operations) and never really returned.
