    My next weekend experiment. My grandma used to make this when i was in Greece, she would add a big chunk of creamy feta to the plate too when serving was so good.

    I had Stifado for the first time in 2013 when I went with my family to Rhodes, and we loved the dish so much that we learned the recipe and brought it back to Norway, haha. Amazing food. 😋

    This recipe is really delicious. The spices blend so well and none of them overpowers the other flavors. This will be a regular at my house. Thanks for the great recipe.

    Stifado has been in my soup and stew winter rotation for a long while now! You've made yours with a better rustic elegance than i usually do! Great video!

    i was looking for a new beef stew recipe and found this one! made this today, and can heartily recommend it! adding the shallots last so they don't fall apart completely really adds to the overall texture. somehow the sauce ends up really nice and thick even if i don't add a separate binding agent like flour or starch at all, which i usually have to do with tomato based sauces. huge success with my family! thank you!

    When i was younger my grandma used to make it with rabbit and i hated it.
    Then i went to live in greece for a while and tried it with beef and it was the most delicious stifado i ever had. 😋🇦🇺

    I made it with pork chops all cut up. Put bones in too for flavour. Used white balsamic vinegar as its all i had. Used brown sugar and no chili flakes. Delicious!!!
    Thanks for inspiration. I just used what i had. I can seldom afford beef

      If you’re in the UK stock up with big beef joints and lamb legs just before Christmas and Easter when the supermarkets are competing to sell them off at half price.
      I always try and buy enough to last all year. Look out for half priced pork loin and gammon too.

    I make a similar beef onion stew but with pearl onions, much less tomato, and a touch of cumin only for spice. This stifado recipe with the hot pepper flakes, cinnamon, cloves, and sugar sounds more Persian than Greek.

    The oregano, cloves and cinnamon are what makes this a Greek or Middle Eastern dish - adding a sachet or bouquet garni would not require picking out the cloves! The procedure and the rest of the ingredients make it just a basic ubiquitous beef-stew. I deglaze with white wine and place it in a low oven

    I have no doubt this dish is great. But 24 shallots seem excessive even for a beef stew?

    • @steveg8322
      @steveg8322 3 місяці тому

      Wrong. Make this all the time, especially with venison.

    • @rkfarms7415
      @rkfarms7415 3 місяці тому

      I've made another very close version of this dish that was similar, only that variation had more clove, which i found overpowering in the final tastes. The shallot however, was a compliment to the dish. That variation called for them to be chopped, so flavors even more pronounced! Anyhow, unless you are not a shallot fan, I would highly recommend staying with the recommended addition. Onion will change the dish too much, which is why pearl onion is the recommended sub for those shallots. If you were to make any changes, I'd recommend half the shallot and add pearl onion in place. 😊

    • @TheStanfordKid
      @TheStanfordKid 3 місяці тому

      It really needs that sweet pearl onion flavor. It is as much an onion dish as a beef dish.

    Stifado is better made without browning the beef and far less tomatoes. I has a better lighter flavor. Use plenty of spices and wine. This one is more like Kokinisto, also very good.
