Smoked & Braised Beef Shank

  • I picked up a beef shank from my local butcher shop and wanted to give it a try. This was my first attempt at cooking one. We used the Lodestar Grills offset smoker to give this beef some nice smoke flavor then transferred it to a roasting pan to braise for a few hours afterwards. This turned out great and was delicious!

    What a tasty looking roast Abom it looked amazing. Just an fyi for you Yankees its not pronounced draught its pronounced draft and it means its come out of a cask rather than a bottle or can so the bottled beer draught was made in a cask/ barrel then bottled after the fact. Like they do with oak aged whiskey.

      Since draught is cognate with "draw", his pronunciation might be more original, even though you're right about the more common pronunciation and spelling in modern English usage.

    Buy yourself some white cotton gloves for the thermal under your black gloves. I shred pulled pork and beef shin with my hands using this method.

    An interesting pronunciation, in Oz we call that beer, Draft. Guinness is great for cooking. Australians are just starting to discover smoking which surprises me. I do find it very unfair having to watch you eat this though !!🤣🤣

    When you’re smoking the shank are looking for a temp or just a look and texture before you pull and put it to roast?

    I do usually use the oven for the braise step for things like this. When I do ribs I do 3 hours on the smoke, and 2 wrapped in tin-foil with apple juice and apple cider vinegar. Last week I did apple juice and Jack Daniels (Oh yea...it worked). After the braise I mop the ribs and return them to the oven. FALL OFF THE BONE for my family because that's what they like. I personally like a little "chew".
    Why use the oven? Because my $100 smoker doesn't hold a steady temp. It's propane and just can't keep a steady temp. Yep, looking at another smoker...reading more on it, that's one of the faults many have complained about, the need to CONSTANTLY tend the pit every few minutes.
    I haven't done a beef shank in 2-1/2 years...might be time, but WOW that price went up. Last time I bought one it was about $2.50/lb...so $7/lb is CRAZY now.
