- Smoked chuck roast is a simply amazing pulled beef dish for a delicious pot roast, sandwich or burrito. Today we smoke a 3lb pot roast on the Lone Star Grillz 24x48 offset smoker and cook it until it's good, tender and falls apart in your mouth.

Did that the other day. As a trail run for a brisket
I’ll be trying this tomorrow. Just got a new pellet smoker/grill today. Was wanting something to try for the first cook. This fits the Bill. Thanks.
We always enjoy this recipe. I’d say we make it a couple of times per month, and it’s great for an all day pellet grill cook. If you want it to pull apart and be tender, the braise process at the end of the cook is what does it. I always underestimate the amount of time for the braise, so give it some extra time in your planning if you want it to get to “pull apart with a fork” stage. Have fun!
