  • When you don't have an expensive crusher destemmer, try the ultimate secret trick... a milk crate! With this setup I was able to crush and destem about 200lbs of grapes in roughly 30 minutes.

    Good idea. I made my own with mesh wire painted with food safe lacquer - but this is better since the food crate is already food safe

      Елена yes, you can crush the grapes that way, but you still need to remove the stems, which is a long job

    If those holes on the milk crate were a bit smaller it would be awesome. Thanks for sharing your idea. With two buckets one with holes and a car jack and some wood. I can crush and press for under $10.00.

      There are some milk crates with smaller holes if you look around. I have found a couple over the last year and found that the smallest holed crate worked best for my Chilean Cab Sauv since the berries were so small. The Concord berries are pretty big though

    Thanks for all you're videos. Working on my first batch this year and wondering could you do primary fermentation in a food grade tote in lieu of a bucket? I am getting 20 gal. totes to transport my grapes in my car because they will fit better/more. Wondering if I can skip buying a bunch of buckets or if the bucket shape is somehow helpful?

      You can do it in the totes as long as you are about a foot deep or more. You need enough room to punch down. I have heard something like 2:1 depth to diameter is optimal for open top fermentations but if you throw a towel over it, you should not get much too much oxygen during active fermentation. A little oxygen is fine as long as the yeast are actively munching. It is when things slow down that you need to start worrying.

    Could you have truned the crate right-side-up to crush them even more? Great idea tough.

      You could but you don't really want to crush them too much. Just want to pop the berries, but without crushing any seeds. The berries pop pretty easily since wine grapes have slip skins.

    Don't you need to remove all the little teeny stems too? I read somewhere they will make wine real bitter if left in.

      The tiny stems are fine. It is pretty common to leave a few stems or whole clusters in to add a little freshness to the wine. Too many stems can start to rob color though and add too much herbaceousness or bitterness. If you bite into a stem and it tastes like like broccoli or asparagus, then I would say to try to get every little one out, but otherwise, I wouldn't worry about it. Certain wines like Pinot Noir and Syrah use a pretty high percentage of whole, uncrushed and destemmed clusters pretty commonly with very good results. I think at the end of the day it is just one more thing you can use to steer the wine a bit. Like if the grapes are notoriously overly fruit forward, you might leave a few extra stems in.

    How about freezing the grapes? Will that make the process easier?

      Yeah, you could do that. It just becomes pretty tough when you are dealing with more than about 100lbs of grapes. Will definitely break the cell walls nicely though. I can't think of any downsides in particular.

    They invented these hand protectors called gloves. When you use them it does not take 30 days to get the purple off your hands. Any way thanks for the video
