Let's Use a Bucket Press: Pressing Wine From Grape Skins

    I show you how to use a bucket press to extract the wine from grape skins. This is a simple press that anyone with access to buckets can construct at home. Here we have 10 gallons of the 2013 Durell Vineyard Pinot Noir from the Sonoma Coast.

    I made this and it worked great. I used two pillowcases instead of a brewers bag. The only modification I would recommend is using a board on top, then a ratchet strap to compress the buckets together. I found sitting on top of this thing perched atop a stool to be a little too precarious. The ratchet strap allows you to leave the area for a while too. Thanks for posting!

    I'm going to make some gooseberry wine and this looks like a great way to get the juice out the berries in the first place, thanks. I love solutions that involve spending a few quid in the hardware store instead of buying some specialised and expensive bit of equipment.

    So great, loved your video. The day after I first saw your bucket press video, I found many - 10 gallon food grade buckets behind a local beer brewery. This year I have a huge crop of Mission Grapes which I looking forward to pressing. This year it will be only grape juice but, who knows what the future will bring. I am so grateful for the idea and instructions. : ) Dee

    Very simple to make, just pressed 20 litres of Moscatel juice to ferment over here in sunny Spain. Thank you for sharing your idea!

    Great idea! I am going to try only 2 buckets with a steamer in the middle. Three 5" or 7" high mason jars w/o lids w tops downwards in the bottom pail w spigot. Steamer sits on top the 3 mason jars. Bag with grapes or pineapple pulp in my case, on top of steamer. Second bucket (to sit on!) goes on top of bag. I spent about 90 minutes today using the small nylon bags and straining/squeezing 21 L or 5.5 gallons of pineapple pulp. Thanks for sharing your idea.

    Great idea.
    I have made a wine press using a stainless steel steamer pot.
    I have also used the screw type press and found that by pressing too hard the wine will become bitter. I think the bitterness comes from the skins and crushed seeds.

    If you find the buckets get stuck together, simply cut the top of another bucket off about 4 inches from the top, and use the ring as a spacing collar between the upper and lower buckets.

      I ended up doing this as the ring gets caught and stops you from pressing down all the way

    a conical step drill bit can be used to make holes in the bucket easier, faster and burr free.

    I just bought big bulky press 400 $ it also require to have at least 150 of lb of mesh to be loaded, this is great I wish I see it before

    Great video thanks for the info, I’m wanting to try your product but have only used kits before so couple questions. From video doesn’t seem like your worried about oxygen on sanitation, also is the fermentation complete at this point?

      We sanitize everything before and after. I was just thinking how I actually do more cleaning than winemaking! At this point, there is still so much gas coming off the wine that you don't need to worry about oxygen. Once you rack off the gross lees, then start MLF or bump up the free SO2 ASAP.

    i'm concerned some of the particulate you speak of might be from the plastisizers from the hundreds of burrs created from drilling the numerous holes. i enjoyed watching the video, thanks for sharing.

      I cleaned the bucket thoroughly and saw zero plastic particulate. As I'm sure you are aware, freshly fermented wine has a lot of particulate suspended that will take months to settle out.

    Why have a spout? Does it have a specific function, or could I just pull out the bag and dump the juice in another bucket, or simply keeps he juice in the same bucket?

      The spout takes out one more task from the system. I don't see why you couldn't just pour it out as you suggest. If you're pressing out gallons of wine, you won't be able to simply keep the wine in there, as the wine will come back into contact with the pressed skins once the bucket is filled.

      +Chris Alatalo (The Stampede) I have not used this method with apples. I imagine that the apples will be soft after fermentation, so I think it might just work!

      WineGrapesDirect re your comment. Had you already fermented those grapes on the skin before the pressing. As I was wondering about using this tech for my pears, instead of laboriously spending my day juicing 70 kg of pears using a juicer.

      Yes, the grapes were fully fermented. I can't speak from a place of expertise when it comes to pears. It's possible if you crush and remove the cores that this system could work well enough. This is much more involved, but looks perfect for you: ua-cam.com/video/_hbWIxffLbE/v-deo.html

      Craig, you should get a hand crank fruit crusher and a barrel press. Should do the job quite well. Look up examples of crushing/pressing apple cider -- same method applies.

      Hi! A friend of mine gave me like 25k of fruit (quinces and apples). I ground and then press them with this bucket press and it was awesome. I get 20 litres of juice which I think is a good amount (almost 1L per kilo).
