  • We fire up the PBC Jr and I show you how I smoke up some chicken with Aji Verde also known as Peruvian green sauce.
    Aji Verde (Peruvian Green Sauce)
    1 bunch fresh cilantro
    15 fresh mint leaves
    1-2 cloves garlic
    1 jalapeno pepper seeded
    1/2 cup low-fat mayonnaise
    1/4 cup grated cotija cheese (or Parmesan)
    1/4 cup water
    2 tablespoons Aji Amarillo Paste
    1 tablespoon fresh lime juice
    1/4 teaspoon salt

    Baby food that will make that baby sing,dance and talk.one of the best textures i have seen brother.and those are defintely used in peruvian cooking and this sauce.i am not peruvian food but love the food

    I actually made this today ! Not this channels recipe but from another. Did not see this channel earlier. Slightly different Recipe but it turned out Great ! I made the Peru Chicken too !! Charcoal grilled it on a round Weber !! Kids loved it !! But yeah pretty Spicy !!

    From what I was told coming from my bf mom (who is Peruvian ) she told me if you don’t have Parmesan or contija cheese you can use feta or cream cheese that what she sometimes uses :)

    Sir, excellent cook and that sauce is the best sauce ever. I could eat it on ANYTHING. Glad you use the Aji paste. Many recipes dont and it’s NOT the same. Thanks for sharing.

    So happy to find this! I raise cuy and have been anxious to get a recipe for this sauce not written in Spanish, since my Spanish is more Texican. I’ve found seeds for both the Peruvian mint and the chilies, so this recipe will give me a starting place for the sauce. The Peruvian mint doesn’t taste anything like mint, so I’m guessing you made a substitution there? Anyway, I’m sure I’ll get it sorted. Thank you!

    Killer sauce Chris. I love Peruvian food and that green spicy sauce. Your version looked exactly like the ones I've had. One thing you could try is that Green (or greenish) Peruvian rice they make. I assume they use the same or similar sauce to give the rice the color in the water/stock (I bet adding the sauce to chicken stock would do the trick) to cook.

    Great cook, I really like the looks of that green sauce. I'm always experimenting with different green sauces. Is the Aji Amarillo Paste really spicy? I like a fair amount of heat for sure.

    Jalapeño is a Mexican Chile,as far as I know Peruvians use “huacatay “ and ají amarillo which gives the a different flavor ...

    Make this all the time with brown rice with lemon pepper in the brown rice and you pour this sauce all over the meat and rice 🔥🔥🔥

    What you do is place a tablespoon of Aji on the side on your plate and dip from there. If it is very strong, it is not recommended to place all over your food as many cannot handle it unless you are Peruvian 😁 By the way is not a sauce is Green Hot Sauce better known as Aji Verde, we also have other type colored hot peppers we use to make other hot sauces. Aji is what is known in America as Chilies. One is called Rocoto which by the nature of its color produces a redish jot sauce and Aji Amarillo which produces the yellow hot sauce you added in your recipe. 😍👍

    I’m Peruvian and we don’t use Cotija cheese , that’s a Mexican cheese . We use queso fresco . We also don’t use jalapeño peppers , that’s also Mexican . Please people if you are going to do a recipe from another country make sure to use the correct ingredients. 🤦‍♀️

    Peruvian sauce?! (Aji verde) with cilantro and jalapeno?? No it is not Peruvian. For this recipe you need yellow pepper, huacatay ,cheese, you can get them on latino grocery stores. If you want to taste real aji Verde.

    There is very little about this recipe that is Peruvian. Mayo is NOT a Peruvian ingredient. You use a lightly flavored oil to emulsify the sauce and it shouldn't be chunky like chimichurrie. Needs to be blended until smooth. BTW, where is the onion...and why mint??

    estas utilizando chile jalapeño mexicano.... por otro lado en mexico se le dice cilantro y en peru culantro... no es una salsa peruana.. ojo mucho ojo.

      Mexicans call it cilantro. In English speaking countries it's called coriander. They are the same thing no matter what country they are grown and eaten
