  • Chef Uday Pratap shares his signature "KICK" on a classic Fijian dish.
    Ingredients:
    3 Lbs of Lamb, star anise, cardamom, cinnamon, fenugreek, coriander, cloves, turmeric, paprika, chilli powder, mustard seed, salt, onions, ginger, garlic, bay leaf, jeera, vegetable oil

    I would just like to clarify that while these dishes are made in fiji, it was the Indian community who invented it there, the various masalas and spices are consistent with that of the Indian subcontinent and therefore make the majority of the dishes on this channel Indian innovations
    I am a fiji/Indian born and bred in New Zealand and my mother makes these dishes too

    In your future videos It would be great if you can add a prep time and cooking time… also if the videos can show which part of the meat should be used , and how to chop it😅

    Going to try the now. First step you have coriander seeds but it looks like cumin in video. Am I correct? Also the “KICK” is plus/minus a few ingredients of garem masala correct? Thanks for this recipe looking forward to preparing 👍🏾

      Cooked it yesterday for a family function, increased meat to 4kg also increased ingredients. Woohoo! that was the best curry ever. What a kick 😃 It flew in no time. Awesome recipe. Vinaka!
