In Chicago, we make a Jibarito sandwich where the plantains are the bread. It's a Puerto Rican dish and it is delish!!

The flatter they are, the crispier.

I definitely want to try this recipe. How long did you cook the plantains on each side the 1st time you put them in? Before you smashed them?

What does soaking the plantain in the water do?

Instead of having the actual salt grain on it you soak it in the salt water taste great

Question are they hard like the store bought tostones? My original teeth can't handle them.

@Amanda R: No. I asked the same thing in the supermarket. Both are in the Banana family and both contain fiber. The darker and browner they are, the sweeter they become. However, there is a slight difference. Bananas are sugary and plantains are starchy. Bananas are considered fruits eaten as desserts and are put in baked goods. Plantains are considered a vegetable for culinary purposes and are mainly for meals/side dish. Green bananas are easier to peel and are your yellow bananas before they ripen. Green/Yellow Plantains are bigger and have a thicker skin which you have to peel with a knife. Both can be eaten at any time. Hope this explanation helps. :)
