Another reason to can beans and not dry can beans would be in case you are without water during a long term situation, then you don't have to worry about water to cook your dry beans....

I can't agree more. Winter is the best time to can. I freeze my tomatoes from the garden to can in the winter. I definitely need to can some more meat again. We'd purchased half of a cow and pig so our freezer is full. I love the fact that winter canning helps heat the home in the winter too instead of summer. This looks delicious! Love yall, stay warm! ❤

Yeah! I love canning in the winter, too. Keeps the house warm and when the recipes are cooking before canning the house even smells warm and seems more cozy.
Hello, Ms. Lori I had a couple of big canning days here. I canned sweet potatoes that weren't cooked for Christmas, 8 pints. And then, I started on beans and bean soups. I got 7 quarts of pinto beans w/ham, 7 quarts of great northern beans w/ham, onions, garlic, celery, carrots and a bit of red bell pepper. 6 pints of 15 bean soup with sausage and vegetables. And finally, 14 pints of plain beans. It's very satisfying to see the fruits of your labor. I know that what I put up is of good quality and will be available for a long while. I have much more planned for "Canuary " and February.
You were a busy gal! I love canning my pinto beans up, then seasoning them to whatever purpose when I use them. A couple of gals have told me how easy the insta pot is etc..that I don't need to can my dry beans. They must not understand that love of accomplishment it is when your shelves are lined with your own short cut meals!
If you can afford it. I get a whole roast at Costco . Around 30 lbs for $150.00 or a primal cut of brisket at Costco. Around $75.00. Thank You. I learned how to Pressure can from UA-cam. My mother would not teach us. To her it was woman's work. Us boys, we would put our eye out. when she did can. We were not allowed in the kitchen. I have taught my younger brother and his wife how to pressure can. I am 60. Back then us boys did plowing, splitting wood, and hunting, gardening and yard work and repairs on the house. kitchen and laundry was off limits. This hurt me when i joined the Navy 1983 to 1987 and went out on my own. I was not prepared. But I still love my mother and miss her. Different times back then, She was the rock of the family. bless you.

Great video. I keep all my canning supplies in a tote, extra lids, extra rings, funnel, debubbler, magnet lifter, jar lifter, spoon, dish towels. That way I know exactly where everything that I am going to need is at.

Canning protein is my favorite thing to can. Its so incredibly expensive and I have to pay close attention to sales but when its on the shelf, I breath a little easier watching the prices going up.
I have watched this 2 times & I think I am ready to can some meat! My mom always froze our meat so I never learned how to do that! Thank you so much for sharing! After years of watching you, I am ready to start back canning everything! Life throw me a curve ball several years ago with an incurable blood disease & I am on chemo trying to keep it from causing a heart attack, stroke or blood clots! I have a tote that I keep all of my canning gadgets in. I do that cause I’d lose my head if it wasn’t attached. And I have a daily to do list because my brain just doesn’t function like it did in my younger years. I think canned food is beautiful.. ❤❤

I love Beef Tips! I can make so many different meals with them from Stews n Soups to Beef Tips n Gravy with Rice or Potatoes to Open Face Beef Sandwiches! So many different things to make! I'm not able to do any canning anymore or much of anything with my Neuropathy from head to toe! I can dream n watch you do it. I love watching your Videos! I couldn't ever get my Daughter to learn to Can foods or anything! She just never had an interest in doing anything like this! She hates to stand and Cook! She sure didn't take that after me or my side of the family! My Momma, Grandmaws, Aunts, Sisters and Myself have lived our lives Gardening and Canning and Putting up Food for our Pantries! Yellow pepper soup with leeks, Angel Biscuits, clam dip, Cornish hens marinaded in lime , ginger, garlic, olive oil. Fried cabbage and jasmine rice. Roasted garlic, brussels sprouts and carrots. We finished with Ina Gartens carrot cake. My cake wasn't as good as I hoped. My raisins were old! Don't be serving old raisins!
I can most of my foods in Pints and very few in Quarts. This way I can make anything quickly and as you said, no preservatives or other things I don't want. :) I save at least 1 video for all the channels I watch. That way I can go right to them when I want to see what's been cookin'. LOL
Once you can meat you realize it's pretty simple and it is soooo convenient. It takes so much time off of preparing meals as well. When I don't feel well, I can whip up chicken soup in the time it takes to dump a few jars in the pot and bring to a boil.
I felt no confidence that I could safely pressure can meats, too. But after a little while actually doing it I truly feel competent... and YOU will, too.

I love your wooden ladle. I use to have to hunt for my canning supplies too. Now I have 2 of everything. I bagged up a set of what I use to can….de-bubbler, funnel, tongs, etc and have it in my pantry. Then I have another bag of supplies I put inside my pressure canner along with my canner book and it’s stored in my metal cabinet in my garage where my other big pots, strainers for canning, are kept. It’s nice to finally be somewhat organized now. I was afraid I would wear something out in the middle of canning season so when I acquired some canning jars, lids I acquired things I already had( our friends downsized and I got her canning supplies) I thought ok this is good! It’s all good!
Hi! I really enjoy all your videos. I'm 73yrs old and last year in March I pressure cooked for the first time. Your videos gave me the courage. I did pinto beans for my first canning. I love the taste of the beans home canned. I've done a few more things. I would like to request a cook book with just your canning. I trust your methods and we eat very much alike. My parents were born and raised in Arkansas. Even though I'm born and raised in California, I'm more an Arkansas gal. It's my heritage. Love you.
I just started canning last year. I buy things on sale and can them up. I have tons of chicken and turkey, beans, applesauce, but not much beef. That is on my list to do now.
As you know canning small meals is a newfound convenience for some. This looks like another delicious pantry addition. My first favorite small jar was corned beef. It is just a big meal I never cooked for one person. I find it very comforting after a two-hour drive home in a terrible blizzard. This is a time I find I am grateful to be retired and not making the drive. Those mushrooms look so yummy!

Today, I canned 5 lbs of cooked ground beef with chopped onions and seasonings. The rest of the chub I froze plain in 1-lb pkgs. Tomorrow's task is your chuck roast recipe. Gotta get beef stock to put it up. I'm loving to can food. I made a big batch of spicy salsa last year and this year. Used up the last jar of spaghetti meat sauce I made from your recipe last year. I totally agree with you about cutting up roasts on your own! Plus, you can make it as lean or as fatty as your preference! If you can, get a rapport with the butcher 😉….it helps to know when sales are coming up! Most are very helpful and are proud of their jobs…..👍
Thanks for the tip about getting a roast and cutting it into the tips for the recipe. You are right, the more prepping or processing that is done by the butcher or market, the more we have to pay!
I never canned meats before, going to try some beef tips, they look yummy! My Mom and Dad always canned beef, chicken and venison so I'm familiar with that, but never canned meat myself. hope all is well, pray for you and Mr. Brown often.
My grandparents done a ton of canning back in their time. They had either 2 or 3 pressure canners, from the 30's or 40's. plus 3 or 4 cold pack canners. I actually have grandma's last new cold pack canners. I've done some canning on my own, but remember helping grandma do some canning.

I've canned chicken bone broth, sliced mushrooms, getting ready to can up organic mandarin oranges and lemons today and making another batch of elderberry syrup for keep our immune systems boosted. Don't want us to get any of the sicknesses going around. I have a chuck roast in my freezer that I need to can up(will most likely use your recipe) and I am going to can up sloppy joes with ground beef. I love watching you and Mr. Brown. The processing time is different, and I would rather add just what I want to combine when I'm ready to prepare the final meal. This looks delicious! After making a batch of your Italian beef when you put that out, I can't wait to try this! I like to can my stew meat up but never thought of a gravy over the beef. A whole hog comes in next week so needing room in the freezers I was planning to can up some of the oldest meat, a few round roasts need done and you know it will be fall apart delicious in this recipe. I now have 2 cows worth of fat to get rendered as well. Today's high was minus 13 so just as well keep the house warm and 2 canners going this next week. Thanks for another great recipe Ms. Lori!
Winter is my favorite time to can too. All our "excess" garden produce goes into a freezer and pulled up and canned when it gets cold. Warms the house when it needs to be warmed and leaves me free for farm chores over the summer/fall.

I finally figured out, always start out with a bigger pot than you think you'll need.
I did winter canning this year to help keep heating bill down. Instead of the gas furnace heating the house, the electric stove is doing it 😊

I love your wooden ladle. I use to have to hunt for my canning supplies too. Now I have 2 of everything. I bagged up a set of what I use to can….de-bubbler, funnel, tongs, etc and have it in my pantry. Then I have another bag of supplies I put inside my pressure canner along with my canner book and it’s stored in my metal cabinet in my garage where my other big pots, strainers for canning, are kept. It’s nice to finally be somewhat organized now. I was afraid I would wear something out in the middle of canning season so when I acquired some canning jars, lids I acquired things I already had( our friends downsized and I got her canning supplies) I thought ok this is good! It’s all good!
I could have three or four sets of canning equipment and I'd still be set to cussin' (under my breath of course🤬) trying to find stuff sometimes.

I don't know if you already do this but when I am done canning, I put all the accessories inside the canner so I don't lose them. I love your videos!

Hi! I really enjoy all your videos. I'm 73yrs old and last year in March I pressure cooked for the first time. Your videos gave me the courage. I did pinto beans for my first canning. I love the taste of the beans home canned. I've done a few more things. I would like to request a cook book with just your canning. I trust your methods and we eat very much alike. My parents were born and raised in Arkansas. Even though I'm born and raised in California, I'm more an Arkansas gal. It's my heritage. Love you.

I just started canning last year. I buy things on sale and can them up. I have tons of chicken and turkey, beans, applesauce, but not much beef. That is on my list to do now.
As you know canning small meals is a newfound convenience for some. This looks like another delicious pantry addition. My first favorite small jar was corned beef. It is just a big meal I never cooked for one person. I find it very comforting after a two-hour drive home in a terrible blizzard. This is a time I find I am grateful to be retired and not making the drive. Those mushrooms look so yummy!

Ingredient canning gives you more versatility. You can create much more variety in your meals. I hardly ever repeat meals in a month.

Today, I canned 5 lbs of cooked ground beef with chopped onions and seasonings. The rest of the chub I froze plain in 1-lb pkgs. Tomorrow's task is your chuck roast recipe. Gotta get beef stock to put it up. I'm loving to can food. I made a big batch of spicy salsa last year and this year. Used up the last jar of spaghetti meat sauce I made from your recipe last year. I'm having fun getting ready for winter and for whatever happens after the election. What will be will be...

I love having home canned beans in my pantry, I use no less than 3 different color beans in my chili.
I totally agree with you about cutting up roasts on your own! Plus, you can make it as lean or as fatty as your preference! If you can, get a rapport with the butcher 😉….it helps to know when sales are coming up! Most are very helpful and are proud of their jobs…..👍
Thanks for the tip about getting a roast and cutting it into the tips for the recipe. You are right, the more prepping or processing that is done by the butcher or market, the more we have to pay!
This was wonderful. I love making broth. Also side note one of those beef rib bones added to spaghetti sauce when cooking. Such flavor!

I never canned meats before, going to try some beef tips, they look yummy! My Mom and Dad always canned beef, chicken and venison so I'm familiar with that, but never canned meat myself. hope all is well, pray for you and Mr. Brown often.
My grandparents done a ton of canning back in their time.
They had either 2 or 3 pressure canners, from the 30's or 40's. plus 3 or 4 cold pack canners. I actually have grandma's last new cold pack canners. I've done some canning on my own, but remember helping grandma do some canning.
i agree with you i want my beans canned and ready to go. i also agree winter is the best time to can. not so pressed for time helps heat the house ect.
I love my canned green beans. This yr I think I might explore other bean options as I learned a lot from all the participants in Canuary❤❤❤ can’t wait to get started ❤

Ms. Lorie, sorry I missed your live. I took have been busy with doing some winter canning. I've canned chicken bone broth, sliced mushrooms, getting ready to can up organic mandarin oranges and lemons today and making another batch of elderberry syrup for keep our immune systems boosted. Don't want us to get any of the sicknesses going around. I have a chuck roast in my freezer that I need to can up(will most likely use your recipe) and I am going to can up sloppy joes with ground beef. I love watching you and Mr. Brown. Great video! I agree Miss Laurie, I have always canned ingredients aseperately also. The processing time is different, and I would rather add just what I want to combine when I'm ready to prepare the final meal. I also agree with washing all jars once they're cooled before stocking them into my pantry! Thanks so much!

This looks delicious! After making a batch of your Italian beef when you put that out, I can't wait to try this! I like to can my stew meat up but never thought of a gravy over the beef. A whole hog comes in next week so needing room in the freezers I was planning to can up some of the oldest meat, a few round roasts need done and you know it will be fall apart delicious in this recipe. I now have 2 cows worth of fat to get rendered as well. Today's high was minus 13 so just as well keep the house warm and 2 canners going this next week. Thanks for another great recipe Ms. Lori!

Winter is my favorite time to can too. All our "excess" garden produce goes into a freezer and pulled up and canned when it gets cold. Warms the house when it needs to be warmed and leaves me free for farm chores over the summer/fall.
