- Amritsari Chole Recipe is the simple yet very tasty Punjabi Style Chole or Chickpea recipe made with Chole, Onion, Tomato and Spices. They are the same chole which we get in the Punjabi joints on the streets of Delhi. This Chole recipe tastes great with naan and bhatura, you can even serve them with potato tikkis or patties. This is hotel style chole recipe which is tried and tested, which we ususlly make for weddings and functions. I have given the recipe with exact quantities.

sharing the 1/2 kg chole recipe below, if you want to make smaller quantity.
Amritsari chole ( ½ kg Kabuli chana recipe which will be enough for 7-8 people)
While boiling chana-
Kabuli Chana- ½ kg ( Soaked in water for 8 to 10 hours )
Salt- 1 tsp
Dry Amla-1/2 tsp(If Dry Amla not available, you can use 1 ½ tsp tea powder tied in cloth,).It gives black colour to chana.
Refined oil-1 tsp
Bay leaf-2 number
while cooking-
Oil- 80 ml( 1 cup)
Ghee 30 ml( ½ cup_
Bay leaf- 2 leaves
Black Cardamom-2 number
Green Cardamom-5 number
Garlic paste-30 gm( 4 Table spoon)
Ginger paste-15 gm(2 Table Spoon)
Green chili paste-20 gm(2Table spoon)
Raw Onion paste- 300gm( 3 cups)
Grated Yam(Suran)- 50 gm (1/2 cup)
Chopped coriander-25 gm( 1 small bunch)
Chopped Mint leaves-10 gm( 15 -20 leaves)
Chopped Spinach-30 gm(1 number small size bunch)
Red chili powder -12gm(1 1/2 Table spoon)
Roasted Jeera powder -8 gm (1 tsp)
Garam Masala- 12 gm(1 table spoon)
Ready made Choley Masala- 20 gm( 2 table spoons)
Hing- 2 gm (1/4th tsp)
Anardana powder-15 gm(1 1/2 Table spoon)
Coriander powder- 12gm( 1 1/2 Table spoon)
Amchur powder-2 gm(1/4th tsp)
salt -10 gm (1 Table spoons)
Ajwine- 4 Gm (1/2 tsp)
Fresh Tomato paste- 200 gm(4-5 tomatoes
1/2 kg boiled Kabuli chana
kasoori methi- 5 gm(2 Table Spoons)
black salt 1/2 tsp
Tadka ingredients
Remaining ghee- 20 gm
green chilli-3
ginger shredded -2 tsp
hing-1/4th tsp

Kya onion Jahan kahi koi bhi recipe mein use hota hain waha - boiled cabbage otherwise boiled doodhi vaapar sakte hain? Yeh theek rahega?
Cabbage ka apna alag taste hain. I think onion usually gravy thick karne ke Kam karta hain. To uski jagaha cashew paste ya mungfalli til ka thoda paste ya gadha dahi ye sab use ho sakta hain

For pindi chana..a smaller version of kabuli chana is used

Chana need to be soaked overnight. It can be cooked in a big vessel with lid on ( slow flame no frequent stirring) . Quantity pls multiply as per measurements given in video

In Australia, it's very hard to get dry Amla! Can I add amla powder instead of it?
You can also use dry peels of pomegranate, for black colour. That what my dadi nani did.
