I never usually comment on videos but I have been watching you for a few weeks now and have actually learned a lot about Japanese cooking, the origins, meanings and traditions. I have found watching your videos make me very happy, they're relaxing to watch and comforting in many ways. I'm grateful and I thank you~
Taiji, I want to thank you deeply for this recipe. We make it minimum once per week at home, and every time we eat it, it feels like a little celebration.
My daughters love ramen, and I usually make a simplified recipe for shoyu ramen. They also love miso, so we wanted to try this, and they loved it! I was happy to find shiro miso in our local grocery store. We put a little less sugar because we prefer things more on the savory side, and it was delicious! Will definitely make this again!
as much as I have researched, baking soda is 99% Sodium bicarbonate, where as baking powder is primarily with Sodium bicarbonate, it also contain other additives such as Calcium phosphate (weak acid to prevent it making basic) and starch (blocking agent to prevent reaction). in this case therefore baking soda will work better, but both will work. but thanx for your question!
soy egg? you mean Nitamago? you can certainly add it as a topping, but not mandatory. ua-cam.com/video/sYUp0qCAtzw/v-deo.html I make alternative recipes for those, who do not have easy access to japanese ingredients. so dont be mad at me.

Great Video👍 Keep it up
Thanks, will do!
Good video.
just a quick note that backpulver isn't baking soda, it's baking powder - two rather different things. baking soda is 'natron'

um yes hearing you make that noise let's me know just how good your soup really is umum.
Can i use Gochijang instead of the chili Bean paste?
It’s essentially the same product, just a different regional variety. I even made this with sambal and it still tasted great!
It will taste good but ITS NOT THE SAME
Slurping is good 😂
Is boiling pasta for 3 minutes correct? Wouldn't it be too stiff/al dente?
It's capellini, a very thin pasta and it says 3 minutes on the package.
👍
Osaka uses buckwhest noodles .
Never saw spagetti used

where are the soy eggs? And since when do you eat ramen soup with Italian noodles?
soy egg? you mean Nitamago?
you can certainly add it as a topping, but not mandatory.

Why pasta is used?
Other than the pork it looks wonderful..but thats a east fix chicken instead
