My dad taught me to warm the oven to the lower it will go, turn it off and close the oven door behind the dough to get a quicker rise. Works terrifically!

I have killed 4 starters. A friend is bringing me hers so I’m hoping we are done with the dead starters. I bought the book though and I’m so happy with it! Your bread is like art! I can’t wait to get this starter right!

it has taken me YEARS to get sourdough right.... i wish i was exaggerating LOL but it has been well worth it, I really enjoy making it and the focaccia is super fun. I make a couple loaves every week and have been tinkering with how different flours interact. I have a gluten sensitivity and with the fermentation process I am able to tolerate sourdough. ---FYI - I love Old Dog Pottery!!!! Happy Baking!!!!!! and Happy Holidays!

What is a bread starter? I see "how to make bread" homestead videos, but I've not seen one that explains what it is and/or why it's necessary, etc. So, videos are geared more to someone that already knows how to make bread from scratch. Can you maybe make a video for those like me that has never made bread but wants to learn? Thank you. Love your videos.

It's a normal thing I've noticed for someone to either bake well OR cook well. Two totally different things. Sounds like you two are a great match since he mostly cooks and you usually bake. I do almost all of the cooking. I enjoy baking but it's a special occasion if I make bread or a dessert, since it's more time consuming. I am dying to try making sourdough bread tho! Hey Jill, Great video on making focaccia bread today , enjoyed it very much. I am going to make some with my 3 week old starter. My starter still needs a lot more time to mature I think.In the case of a starter , time is taste, can't wait.. Always a pleasure to visit.
I bought her book on your recommendation...love it. I make the bagels and english muffins monthly. I use my discard to make waffles. I enjoy buckwheat waffles so I replaced 1 cup flour with buckwheat. I make a whole batch at a time a refrigerate the leftovers and pop it in the toaster.

Great tutorial. I’m always over hot in my kitchen, T-shirts and bare feet in Washington. I’m just always hot. And you are in your sweater and beanie hat, Im melting watching you. Lol
I refuse to pay retail for stuff like that, but I'm in a big enough city to have some other good options; not sure if Conway has something similar. We have a really good appliance repair company here that refurbishes machines, including extra large capacity hotel machines, and that's what I bought. Spent about $250 on an old but refurbished machine, and it's a BEAST. I think it's the Speed queen Quantum Gold. Technically it's a commercial machine but it looks like a regular (albeit large) white enamel top loader. It gets everything soooo clean. It will last forever, just needs maintenance every so often like a new belt or whatever. Even if it only lasts 5 years, I could by 4 of them over 20 years and probably only spend $1k. Or just repair the same machine and probably spend way less over 20 years. Highly recommend, especially for all the farm dirt!

So you don’t let this do a long bulk rise ? That makes it less sour nice! I used this same recipe but let it sit over night and it was really sour I don’t love it tasting too sour I’m going to try it fast like you did. Great job
If you put your starter in the fridge you don’t have to feed everyday. You take it out and feed it WHEN you want to use it. I just started making my own sourdough about a month ago, and I absolutely love it!!! It’s so fun and rewarding to bake a loaf!!
That looks wonderful! I’ve heard that you can proof it in the instant pot with the Yogurt feature if you’re in a hurry but I don’t have any first hand experience. I wonder if it would be beneficial to keep a general gram/cup/tsp conversion in your head to avoid accidentally adding too much of one ingredient and having to scoop it out of the bowl. I know I get impatient and would most likely over fill things and throw off the chemistry 😂
AWESOME bread and decoration! I can't wait to try it. My sourdough is just too wet but I guess down here in Florida, I need to compensate for the high humidity and reduce the water. I've done anything wrong that you could do but have learned each time. So all is not lost - focaccia is my favorite and this video was GREAT.
Hey! I really recommend getting a cheap kitchen scale. I will work on converting my recipes for easier access but most sourdough recipes will work in the gram metric. Took me forever to learn lol.

Check out Ben Starr sourdough Baker... he teaches once your sourdough is established you no longer have to feed it, unless of course you are running low. Saves so much money and time, no more baby sitting/daily feedings.
I wish someone local to me in NC had some starter to share. I speny the 10 days a while back to build one and it failed....dont know why. I had shared starter years qgo i keept alive for 10 years, but lost after damage in a hurricane. Been having to buy our sourdough, its the only bread i can tolerate, and even that in small amounts. I heard that i can make this and other breads using regular yeast, and let the dough sit in the frige for several days to ferment? Anyone know about this method?

The bread starter is for sourdough bread and has live bacteria and needs to be fed to activate

All great questions. I use my Berkey water and King Arthur's unbleached bread flower. Then I let it sit on countertop overnight
