    You can freeze pasta before cooking, when ready to use, take out of freezer and boil. Enjoy, we have made homemade for years (my husband is Italian 😀).

    You can just let the pasta air dry to preserve it. I don't think you need to use a freeze drier. I am so glad to see you feeling better.

      Yup, 100% dry before putting it away or else it will get moldy.🤢

      Yes, putting a fan on it helps. It takes 2-3 usually, although in Arkansas with the humidity levels it may take a little more time! 😃

      So once we air dry it what should we store it in??? A ziplock bag in the freezer?

    Great advice about starting homesteading a little at a time. I bought a tiny 650 sq foot cottage 9 years ago. I have a nice 8x10 garden plot & some raised beds. I planted 27 fruit trees/bushes. I waterbath can & had to find a dedicated space to store. Turned a small closet into shelves. Work with what you have.

    I learned my favorite way to knead dough from my sweet friend from Afghanistan.
    She grabbed a huge metal bowl, mixed up her ingredients and plopped down on the floor with the bowl between her knees. She went to town kneading the dough in the bowl. I was so surprised but when I tried it myself I loved it!
    Kneading with your upper body weight directly over the bowl on the floor is sooo much easier than at counter height! I’ll never go back!

    Once again, Jill, YOUUU are rocking it and that is just the pep talk I needed as I am also that girl well older woman who never was able to manifest my dream of having a farm that was self sustaining, but I do have the ability to can and to make sourdough, and I strongly believe in teaching these skills to others. I am going to attempt the noodles and will be watching to see how the dehydration goes.

    Thanks for this recipe Jill! I just bought a stainless steel pasta machine from an op shop for $15 with the intention of making sourdough pasta!?! So glad I did!! I almost didn’t buy it because I’ve never made pasta, let alone sourdough pasta before, but I though I should step out of my comfort zone and try/learn something new!

    I have the same pasta maker and have had it for 40 years. When I make a large batch and have leftover dough, I have a fold up clothes rack and dry it to freeze, for meals later.

    I've made plenty of pasta before . Will try that. No better way to burn of Carbs,needing dough and Cranking through a paster machine

    While I have not tried sourdough pasta I do use pureed vegetables in my pasta Hough to add color, favor and nutrients. My nephews loved the process of making homemade pasta when they were little.

    Great job, Jill and June!! How cool that she wanted to help you, Jill. And you are so right about doing what we can do right now, wherever we are! I recently purchased a food dehydrator, and I'm so thankful to have another way to preserve my garden produce! I don't currently do any canning, but one day I'd like to take a class on it, just to be sure I learn all the safety protocol.

    Money saving tip .. I got a hand-me-down kitchen aid and purchased ( not the full kit) just pasta roller (a must have! love it ) very easy to make thin sheets ( for ravioli and lasagna)...then I got one, like the one you are using at a second hand store for the cutting into strips/ only one pass through.

    I have wheat intolerance but if I let the sourdough pasta ferment for 2 hours and then put in the fridge for 24 -48 hours to let it break down really well.

    If you make a wider, flatter well you should have less egg leakage. Low and wide flour walls are best from what I understand.

    I really enjoyed this video. I haven't made pasta in a while as I currently don't eat much of it due to a diet restriction, but I used to. I made lasagna noodles, just the eggs and flour recipe, rolled them out by hand and hung them over the back of a kitchen chair to dry. Your dinner looked fantastic! ...wish I was in Mama Jill's kitchen for some of that!

    Helpful tip- After you break your eggs into the flour use a fork to mix the eggs while catching bits of flour and mixing it in until it starts to come together then use a bench scraper to fold the dough over on top of itself. It helps with the mess and keeping the dough together. BTW where do you get your beautiful pottery?

      I've used a bowl to mix before and kneaded on my cutting board which was sitting on my stovetop. it worked just fine. 😁

    I use a wooden clothes rack to hang dry my pasta. It keeps for quite awhile. I can’t wait to try putting in a little sourdough, mmm

    I love making sourdough egg noodles, and add them to my crockpot chicken veggie soup. It's a delicious healthy simple weeknight meal.

    Hey Jill! If you’re planning on freeze drying the pasta I would suggest cooking it first then freeze drying, remember when it’s reconsistuted the texture will be like what it was before. By cooking it first you can eat it immediately once reconsistuting versus having to cook it after reconsistuting.
    You can also air dry pasta by hanging it over a line or clothes hanger until it’s completely dry and you can snap it in half, then store and cook like store-bought whenever you want pasta!

    I used to make homemade noodles with my kids. They would eat the noodles raw. We had a blast. I hand rolled them like you would cinnamon rolls and their job was unrolling the pinwheel and hang them on the oven racks.

    Hi Jill. Watch Becky at Acre Homestead .She makes pasta for a whole year and dries it naturally on an open table to dry it . You do not need to have a freeze dryer and with the cost of power these days it makes it far more economical. Glad to see you on the mend. X

    Do you ever cook or make food with almond flour/oat flour or any other kind of flour other than normal/wheat flour. I’m having issues with those. I have made little healthier cookies w out flour…. But I’m interested in makes bread or the pasta you just made w other flour.

    Next time make your well a bit bigger and beat the eggs until it forms a paste while gradually pulling in flour from the rim. Then use a bench knife to cut in before kneading. Otherwise a pretty good tutorial!

    @00:47 yes this is the flour version, but what we are mostly eating from the stores are made with durum wheat / semolina flour. We are ( as human beings) still can’t perfect that at home . Check the french chef on youtube he has a whole series about that. So interesting

    Hello!
    I hope you’re feeling better Jill!!
    Reaching out because I bought your sourdough starter and am reviving it. I’m on day 2, where I added 40g water and 60g flour but my starter hasn’t necessarily doubled and it’s been almost 24 hours.
    I do see bubbles and it smells like yogurt.
    Should I wait for it to double before moving on to the next step? Or go ahead and discard and add 50g water and 50g flour?

    If you don't want it to stick as much together you just let them dry before the last cut
