Curry Chicken With Potatoes (Chinese Style)

  • The recipe for Curry Chicken
    this recipe doesnt need to be follow exactly but more or less the same amount of ingredients needed. if you like it spicier, add more dried chilies or chili.. if you like it more coconuty, then add more coconut milk.
    Blended paste:
    1/2 tbsp belancan
    5-6 dried chilies
    5-6 chilies
    5 candlenuts
    1 thumb size ginger
    1 thumb size galangal
    10 shallots
    2 stalk lemongrass
    1/2 bulb of garlic
    1 tbsp curry powder / chili powder
    1/2 tsp tumeric powder
    1/2 tsp coriander powder
    1/4 tsp cumin powder
    1/4 tsp fennel powder
    a little bit of water
    *Blend everything into fine paste
    2 stems of curry leaves
    2 potato cut into pieces
    2 whole chicken drumstick cut into few pcs / half a chicken
    1 tsp salt
    1 tbsp sugar
    4 tbsp coconut milk
    4 tbsp oil
    Water
    1. Prepare the blended ingredients and blend into paste.
    2. In a pot add in oil and blended paste. Saute on medium high heat until oil secreted out from the paste / tumi until pecah minyak. It will take 10-15mins.
    3. Add in curry leaves, chicken and potato. Stir to coat well.
    4. Add in water just enough to cover 3/4 of the chicken in the pot.
    5. Bring to boil and simmer for 30mins.
    6. Season with salt and sugar.
    7. Close the lid and it seat in the pot for 1hour.
    8. Reheat the curry chicken to boil.
    9. Add in coconut milk.
    10. Stir and serve.

    Galangal a.k.a blue ginger is "lam kio" in Hokkien and "nam geong" in Cantonese. It is written as "南姜" (nan jiang). For China Chinese, dried galangal root is known as "高良姜" (Gāoliáng jiāng). Thanks for the Chinese Curry recipe. The vibrant colour made it look really delicious! :)

    Hallo PS Chef.. Jika u sudah bubuh dan buah ketas itu sudah jadi Rendang Ayam, recioe u setengah ialah curry ayam, daun curry tak paya dalam kuah u, daun curry utk curry ikan saja, kerana rempah u sudah harum dam wangi.. Lenkuas ialah ( wong chiang) in manderine, u sudah miss out.. Kayu manis 1 btg, bungah rawang 2 .dan bungah chinkeh 3 yg kecil, tumis dan bubuh sedikit belachen goreng dan garam, dia akan jadi lebih harum dalam step pertama. Dalam kuah curry ayam.. Gd job, kongsikan recioe kita, kuah u akan menang lain Chef.. Ok. Kam Sia.. Hoxkhoonkup. !

    Galanga in Traditional Chinese is "高良薑" ("gou-loeng-goeng"), in Simplified Chinese it is 高良姜 (zh) (gāoliángjiāng).

    Actually u can substitute the coconut milk with natural yogurt or double cream milk.

    Usually we dont add belacan to cook curry...only when we cook sambal..

    Hey, looks great but one remark though. I don't think this is Chinese Style. It's Nyonya or Malay style - due to the usage of Belacan and Galangal.

    China doesn't have its own style of curry; this is Malaysian Chinese or just Malay. Galangal is called 良姜 or 南姜 here. Source: I live in China.
