    My Yiayia was from Istanbul, Turkey and made incredible Greek food. Her spanakopita was made with fresh baby spinach, fresh leeks, scallions, parsley, carmelized onions, and mint. She never sautéed the spinach, but rather placed the leaves on a baking sheet & placed in oven and warmed the spinach until the leaves would wilt, then she dabbed the spinach with paper towels removed from oven. She only sautéed all other ingredients and assembled the pita. She never used butter or olive oil, only ghee. She basted each piece of phyllo with ghee. She lightly added salt, pepper, and sumac. She then scored the pita into diamonds like Baklava. The oven was set at 375 for 40 minutes to make sure the phyllis was golden. She would remove it and let it rest on the counter until it was still warm, but not hot. It was delicious! She never used feta cheese, or eggs. It was an old recipe of Constantinopolitan Greeks from the once famous and affluent Greek Phanariot Community. Yiayia lived to be 96 years old! Love you & miss you Yiayia!

    Greek food is so underrated bc they don't show enough of their dishes on national TV as compared to, say, Italian or Chinese food. Next time, Martha, show how to make Baklava ! Yum !

    Great episode! Martha and the greek lady have great chemistry! I used to work with a greek woman and she was exactly the same. Friendly but firm. Strict but nice... i love their sense of humor. ! Will definitely make this for my mom

      mean grandma, most languages from the area uses similar terms for grands and parents. but frozen spinach is cool to. use IF you drain and cook it is not going to be soggy. some areas in Greece dont cook the filling prior to baking its then you dont want to use frozen

      I never had dill in spanekopeta either, until I did. I won't go back, it's fabulous!
      (I'm not sure about this recipe though.)
