Flaky Jamaican Patty Crust 🇯🇲 (Dough)

Fill these yummy, flaky crusts with whatever fillings you like, veggie crumbles (video link below), cooked spinach, or cauliflower, or even cheese and pizza sauce would partner well with Flaky Jamaican Patty Crust. Enjoy! :)

Flaky Jamaican Patty Crust
NOTE: In the video, the amount is DOUBLE the recipe below
INGREDIENTS: Makes about 8 or 9 patties
3 cups All Purpose Flour Sifted (Experiment with other flours :)
1/2 cup Butter (cold)
3 teaspoons Turmeric
1 teaspoons Curry Powder
1 Vegetable Bouillon
1 tablespoon Sugar
1/2 cup Water (ice cold)
1/2 teaspoon Salt
DIRECTIONS:
Mix together all dry ingredients. With a whisk, fork, pastry blender, or your fingertips, blend the cold butter into the flour until the mixture resembles crumbles. Slowly add water and mix with your hands until dough forms. Add a bit more water, if you find the dough is still too dry. Manipulate the dough a bit to form a smooth dough ball (but don't over-work it, as you want the crust to be flaky and not too "doughy" when baked). Seal in plastic wrap or place into a covered glass container. Refrigerate for at least 15 minutes, prior to use. TIP: You can reduce amount of salt, and bouillon, and use unsalted butter to reduce salt intake.

Roll out dough onto lightly floured surface to 1/8 - 1/4 inch thickness. Use a plate to cut out "perfect circles" (I used a 7.5 inch plate to cut the shape for the patties in the video) or divide the dough into 8 or 9 pieces and roll out separate circles. Do not to over-fill the pastries. Moisten edges of rolled dough with wet fingertips, then crimp the edges with a fork to seal the pastry. Poke "air holes" into the top of the patty. Bake 350F for approximately 12-15 minutes. NOTE: The color of the fully baked patties may not change.

Can i brush egg wash before baking it? Will it make difference?
Hi.. you could if you want to, but for this dough I don't egg wash, as it has a lot of butter and I don't feel it needs it. I use this particular dough for my Veggie... Ackee.. and Callaloo patties check out my (Intl foods playlist). Here's the link for my video for my version of "Jamaican Meatloaf Patties", which I do egg-wash as the dough has more elasticity and is less flaky. Hi...it's a Vegetable Boullion (seasoning for soup or broth) in the foil packet.
The amount of butter in video seems more than a cup. One stick in the 1 lb four pack from Walmart measures one cup.
The butter packets where I live, come in 250 gram packets, not the sticks.

@@markhaye9377 I also checked conversion for 250 of butter... It says 1.10 cup... so just a little more than a cup of butter.
Which flour plain /selfrasing?
Either one will do... Just sift it. Sometimes I even mix white and whole wheat flour as a variation.

I have been doing pretty much the exact same thing, baking for 25 mins at 415F - however mine don't come out flaky. Not sure what to change.
Hey there... thanks for reaching out! Take your time to "flake" in every little piece of cold butter very well, into the sifted dry ingredients, using your finger tips... before you add the liquid. Try to form the dough by hand instead of using a mixer. Manipulate dough just enough, to form a smooth ball... DON’T repeatedly fold and knead the dough … it’s really important to not over-work it, as you want the crust to be flaky and not too hard/doughy when baked. Be sure to refrigerate dough for at least 15 minutes prior to filling it. If you happen to be using regular ground meat (or any other filling), cook it separately till “almost” done … and cool it to room temp, prior to filling the crust with it. Bake the filled patties in PREHEATED oven 350F for approximately 12-15 minutes (415 F for 25 mins seems too high and too long)… line your baking tray with grease proof/parchment paper if you can. My oven bakes it in 12 minutes, but it really depends on your oven. The color of the fully baked patties may not change much, and that’s fine. Let me know if this helps.
Is it a half cup of butter? Looked like a half a pound???
The recipe which is in the description section, calls for 1/2 cup butter. I also noted there in the description, that I doubled the amount for the video. (I usual double the recipe to make patties and freeze some of them)

You would have to double the recipe given to yield 18 patties (or 24 smaller ones). Let me know how yours turn out :)

what type of butter? salted or unsalted
Regular salted butter, but you can use unsalted if you want to reduce the salt intake.

Use a fork because corona and heat from your hand melting cold butter. Chill if too hot for 30 mins

@@judystines3798 Sometimes I double or triple the recipe when I make it, as I love the patties so much. I doubled the amount in the video... you'll probably want to at least double it, to make the most of your time and effort :)
