    MAE HONG SON, THAILAND (แม่ฮ่องสอน) - Welcome to Mae Hong Son, one of my favorite provinces in all of Thailand and one of the most remote and culturally diverse regions of Thailand. Today is Day 3 of our Karen food village cooking tour with Khun Mook. Today we’re starting the day with some cooked rice pounded with sesame seeds. Then Mook and Shikomo are making what is one of the ultimate and national dishes of the Karen people - da poh poh or Khao Baue (ข้าวเบอะ) in Thai.
    First we steamed some red mountain sticky rice which we then took over to the neighbors house to pound with white and black toasted sesame seeds. We pounded it until smooth and it turned into a paste. It was delicious as is, and also with condensed milk to make it sweet. It’s a great Karen snack or sweet for breakfast or to eat with coffee in the morning. We also had a version made with poppy seeds which was fantastic.
    Next we cooked one of the national dishes of the Karen people, called da poh poh, or in Thailand they call is Khao Baue (ข้าวเบอะ). It’s very similar to a deluxe rice porridge, cooked down until fall apart tender and cooked with a variety of vegetables - including a heart of fishtail palm tree, fragrant meat, and dry mustard greens. The unique part of eating this dish is that you eat it as a side dish on top of your steamed rice - not as a bowl of porridge. Additionally, you eat it along with a variety of other spices, chili dips, and unique herbs and vegetables. The most unique vegetable for me was actually a flower that numbs your mouth similar to Sichuan pepper! A fantastic meal and a great time to hang out with Mook and Shikomo in Mae Hong Son, Thailand!

    My mom still make these dishes when we moved to America 15 years ago. I’m soo appreciative of my mom for keeping the Karen food culture alive and well for us to enjoy. But I do miss eating these dishes with all the ingredients back in Thailand.

      I totally get what you said that its amazing how he switched as we would see food bloggers stick to more comfortable western set food even if it be non-western.

    I love "may toh pay" the pounding sticky rice with sesame seeds. We can say "ta ker por " or "ta paw por" the Karen porridge is a traditional dish. The story behind it was, there was a drought and they didn't have enough rice for the family so they boiled the rice with bamboo shoots that they found in the forest.

    For me, this is the Thailand I want to immerse in. I want to learn of the northern mountain communities and a different way of life. A more simple life closer to the bounty and goodness of the land. Thank you to the people of the Mae Hong Son province for letting the world visit your village.
    In the last year, I've learned to cook Sticky Rice in a traditional Thai steam pot and basket. I even was able to score some dark purple Thai Riceberry Rice from my local Asian market. Next, I need to toast me some sesame seeds and use my mortar to make this rice paste. I have Palm Sugar I think I can use rather than dark cane sugar.
    Again, thanks to the Karen people, and Mark for sharing this story.

      Indeed! I grew up in Laos, and these types of scenery and tribes were only a 30-minute drive from the city, i was real lucky to be able to expericence all this at a young age! Laos is a lot more rural and is very similar to Thailand, the food in the two countries also very similar but the Thai have more of a sweet tooth. I MISS SOUTH EAST ASIA 😢

      @@MonkeyFreezing Haha you're right Thai are big sweet tooth aside from bring big spice eater. So a lot of small stall tend to go extreme on both flavor or a lot of Thai chef who cook local Chinese dish will be more sweet than a Chinese descendant stall
      The one that balance Spice Sour Sweet are a true pro here.
      Now I need less spice with a bit sour and sweet somtam for dinner

    I’m from a Kuki tribe living in the northeast of India and we eat the same dish, the method of preparing is also the same but over here we call it Mepoh/changpahme.

    I'm a Garo from Northeast India, Meghalaya... The Dish made from Sticky rice is same as our dish called Sakin Gata/ Wanti ✨... Only difference is that the rice is pounded before steaming it.. ❤️❤️

    This village cooking is a concoction of herbal medicine. No wonder they have so much strength with pounding & hard work. Their skill using a machete knife for cutting vegetables frightened me. No cooking oil, butter no fat is the most healthy cooking. Black sesame rice is hard work. Thanks Mark for showing us your experience with Karan people. What a revelation.     On Laos Thailand and Vietnam they have similar food they like so much herd or aromas in there food even it's only vegetables dish, I really love there food I missed there food and there own authentic and traditional food,I miss traveling too and explore so much food,omg 🥰

    The sticky rice with the seasame seeds and cane sugar look so delicious! Koreans roast the soybean and make it into powder and roll the sticky rice. It's call "Injeolmi Tteol 인절미 떡". It's one of my favourite rice cake.

The world is a better place with a man like Mark doing his thing! You have no idea the impact you’ve had on my life brother! Truly life changing. One of my ultimate goals and dreams in my lifetime before I die is to meet you. Meeting you and hopefully speaking with you and maybe even eating with you (I know this is a long shot) would be one of the post fulfilling and wholesome experiences life has to offer.

    5:45 Since I was a kid, my all time favorite Karen dessert or snack is Mea Toe Pea (it’s like black sesame Mochi rice cake). I remember once a year, especially during Karen New Year, that when elders make it and pass out to kids.

    Love from Mizoram, India. We also eat sticky rice cakes with sesame and jaggery! Most of the dishes are extremely similar.Plus we also add the dried flower (isodone toniforius) to some of our dishes too! Amazing!

    A northeast Indian , an A'chik , one thing I've seen is that the sesame seed and sticky rice item made here is similar to our semi - sweet dish called "Sakin" but instead of pounding it we steam it by making a powder out of sticky rice and layering it with sesame seeds ( which is sometimes made into powder or used as it is) 😄. Also , Khao Baue is similar to our "Pura" ,a sort of porridge made with pork usually and beef , chicken and in rare cases , fish . What a beautiful village man I'd live there . Much love 🤍

    Really great to learn about these types of local dishes in many countries. Sometimes you also recognise how close these are to some food you grew up with. For example, the look and presentation of some of these remind me of lots of Sri Lankan food that I grewup with...

    Got danggg 😂 Mark just took a big chunk, full spoon of those chili 🌶 paste. Not all Karen people can take that full spoon of chili 🌶 paste. Mark is one of a kind , he can literally eat everything! 👏🏼👏🏼👏🏼

      That's what real food looks like the stuff we eat outside of the third world countries is all fake specially in america and around that area. Like after learning how to cook my self and learning about food and watching videos like this i realize what i was eating and what i should be eating. And also realize the only reason we have fake foods process in places like america is cause people are greedy and wants things fast but i learned its okay to let people take their time i noticed that's when the food taste good the most.

    The story of Ta Poh Poh: When there were difficult time such as war, natural disaster and lack of food, Karen people make Ta Poh Poh because it can be a big meal with a little rice. Rice is the most important food for Karen people as most Asian.

    I had these yellow flowers in a cocktail in Vegas :) They were called electric daisies. Very similar tingling/numbing sensation to Szechuan peppercorn, but even more intense!!

    Mark you want an interesting food trip. You should take a trip to Northern Norway and try the traditional foods of Northern Norway. I think you would really enjoy the experience. Best time to do so would be during their spring and summer months. Plus the country is an amazing place. You and your family will really enjoy it. You can have fun in Southern Norway with the big cities. But there is nothing like nothing like Northern Norway. The true lands of the Laplanders. I guarantee you will find some amazing content for your videos.

    18:41 omg we make the same chilli paste with every ingredients that you show in the video as a side dish here in north east India in a state near myanmar border.
    Many part of northeast india share so many similar dish with northern Thailand. I wonder if we came from Thailand or IDK I'm so surprised.

      Well, in Filipino, she acted like patay gutom. She acted like OA and also acted like it was her first time eating something.
