do you still need to turn the pie when baking if you have a convection oven?
I would say no, no need.

@@kenhaedrichthepieacademy Thank you Ken. We had 20 people. It was a very good gathering. I hope yours was wonderful too. I have to tell you this pie was indeed the star of the day as far as the pies went. Two things I’d like to inquire about. First, why is it called a chess pie? And second, mine separated into two wonderful layers. Was it supposed to? The bottom was a light yellow layer then a chocolate layer then the crusty chocolate top. I also did your pecan. Oh man. So delicious with a scoop of vanilla bean ice cream…yum!
@@normabumbaugh6929 A little late getting back to you on this, Norma, sorry. I'm a little perplexed about the layering you describe. I've never had the bottom section separate into distinct layers - just one solid chocolate layer, and that thin, brittle layer on top. Go figure. Regarding "chess" pie, the most likely guess is that, in earlier times, before refrigeration was common, folks would keep their pies in a pie safe...or pie "chest"...typically a cabinet with perforated tin doors. From there, it's not that difficult to see how a "chest pie" might have come to be known as a "chess pie". Anyway, let me know if you bake the pie a second time and if you have the same separating issue.
