I just made this cake and have to say it is incredible. Soft & light, slightly tart and sweet at the same time. My friends absolutely loved it. I got 2 handshakes. I felt like Paul Hollywood would have been proud! Instead of crumbled freeze-dried raspberries on top, I used shaved white chocolate. For the filling, I made a raspberry gel and let it set in the fridge. Layered that over the whipped cream frosting in the middle, and man-oh-man, heavenly! Thank you for figuring this all out. The best part is after eating a large slice, you don’t feel heavy or stuffed!
I don't think I've ever felt so relaxed watching a baking video! I LOVE the jazz in the background. This cake looks perfect and the descriptive adjectives throughout added so much! Such a lovely video 🥰

Re: the vanilla extract, YES, I completely agree that whole vanilla beans are an expensive flex that don't really add much that a good extract can't do. You can make your own high quality extract by soaking a vanilla bean in vodka. When you use up the extract you can add more and it replenishes. Using whole beans for every project is not only expensive, it's kind of wasteful, really vanilla beans are only grown in a few places on the planet.

These kinds of cakes are my favourite, light and fluffy with flavoured whipped frosting, the freeze dried berries were just brilliant too. I won't even touch a cake that has fondant or unflavoured frosting on it. What's the point of all those calories if the flavours are not the star of the show?
In Poland one thing for sure would be changed. The cake itself needs to be moisturised with a lemonade or some kind of alcohol. Every pastry chef here would critisie the cake with out it.
If you’re going to the trouble of captioning the ingredients, would it hurt to include the quantities? I get that you want to drive visitors to the full recipe on your website, but it just seems super vague not to reference them in the video too…
This would have improved if you wet the cake a little bit with sugary raspberry juiced water/milk before layering the whipped cream in the center. I am not saying make it soaking wet but some wetness is necessary .
I made this cake and the recipe write up is way off on the cooking time. Do not under any circumstances cook this cake for 15 min at 350 and another 35-40 min at 325 like the recipe says on the Bon Appetit website. Maybe try 350 for like 8-10 min and then 325 for 25? I don’t know exactly but they really should fix that!
You know what would take this cake over the top? Brushing or spraying the cooled cake rounds with a simple syrup, that's been mixed with some Chambord (black raspberry liqueur).
Surprised she used a whisk to fold in the egg whites. I would have used a spatula. Also surprised that the pans aren't greased. Would have liked to have learned why. Editing and sound was very soothing and calming to watch.

I also added half the amount of sugar to the frosting, probably due to the sweetness of the dehydrated raspberries I used. A layer of dark chocolate ganache helped mellow out the sweetness. It turned out great, though I’m not sure I would make the cake itself again. The frosting and fresh raspberries on a simpler vanilla cake, in a heart beat.
