This looks great! I think I may use Einkorn because it's lighter, even fresh milled. NOW, what I can see happened to your cake. Your oil was settled at the bottom, plus the cake sank. This is usually from the cake cooking to slow. - Oven temp wasn't high enough. Also, try it once using yeast or DBl the baking powder- rather than baking soda. Soda neutralizes any nutrients in whatever it's mixed in.
250g sugar is still a lot. I would cut that down to 100g max. That may sound too little for many, but people really need to use less, sugar, they'd soon get used to the taste of having less. It's the same with salt. I cut mine right down, and now all the unhealthy things I used to enjoy such as shop-bought meat pies and sausages, I can't eat because they taste far too salty, so now I make my own, much healthier ones😋
Yes it is always a good idea to be as healthy as possible and reduce salt and sugar. I must test this recipe again with your suggestion. Sometimes it’s a fine line between keeping the balance of taste and texture. I do have complaints from my family with I reduce the sugar too much! 🤷🏼♀️😀☺️🤔
