I grew up in Texas & have heard about this great casserole for years. I don’t know why l never made it but this video makes me realize what l’ve been missing so will make it sometime when my kids are here. We are empty nesters s l don’t make huge meals anymore. I have three grown sons so you probably know how they eat. My grandson is 16 & does he like to eat & he loves my cooking. So sweet of you to make extras for your friends. You seem like the kindest person. ( a true friend to those who are close to you. They are lucky.)

Oh my gosh! So good! I made it pretty much as posted except I used 1 can of cream of chicken and 1 can of cream of mushroom. Threw in an extra little can of green chilies because I had it and used pepper jack cheese on top. This is going into the rotation.....thank you, once again, Noreen.

Noreen, I have tried so many recipes for King Ranch Casserole where some were good and some were not so good. I decided to try your recipe as it sounded so good. I didn't have high hopes because they all have sounded really good and didn't end up to be. Your King Ranch Casserole is the best one I have tried and my entire family loved it. They loved it so much they want me to make it once a month. Thank you that my search is over for the best of the King Ranch Casseroles. I make something similar to this..but use ground turkey ..this gives me another great idea. Also hadn't thought to add the cream of chicken soup..I just used salsa and seasoning. Corn and black beans, olives and mushrooms..are also good add ins. Thanks for a great idea and recipe Noreen
We put Cumin in our Kings Ranch casserole..also if anyone find the white tortillas are too soft and won't hold up if you can find yellow corn tortillas use them.. In my area we use El Milagro they are simply the best..
What a great idea to take it to your friend uncooked! When I was in high school my mom (single mom of 3) broke her leg. We had a lot of people bring us food, which was really thoughtful, but we couldn't eat it in time. We were constantly telling my grandparents to come get some food before it went bad. If you bring it uncooked they could freeze and save for a later date once the meal train stops, but they still need food! I know this isn't rocket science, but it just popped into my head and I think I will make this next time I know someone who needs meals. I might even make a few freezer crockpot meals to take as well :)

The way I had this growing up was with crushed up Doritos (usually the ranch kind, and my dad called it King Chicken Ranchero) mixed in instead of layered with corn tortillas. This looks super yummy though!

This is absolutely one of my favorite dishes my mother makes besides her Beef Burgundy but she does one with Doritos and it's yummy! Aside from that, it's identical to yours. My mouth was watering and I could almost smell it! I know what I'm making tomorrow night! Yay!

This is definitely going to be made in my house. I want to try it as is and also with a bit of salsa and sour cream. I like a bit of bite and I think the Rotel will satisfy that so maybe I won't top with salsa when serving. We'll see. Looks so darn good!

This looks deicious. The sauce is so colorful and beautiful, it's almost a shame to cover it up -- lol! I don't care for corn tortillas, so will try this with flour, though I'm afraid they might become too soggy. When my second son was born, a mom from my playgroup brought us dinner and it was something similar to this. I never got her recipe (mom brain!) but have thought about it often over the past 13 years. I will try this this weekend!
+willydawgs I am afraid flour tortillas are not going to work with this. They will turn this casserole into paste. Give the good quality corn tortillas a try. They are what give this casserole it's body and ability to stay together.

+super geeky Nope. I have addressed this question several times in this comment section. Flour tortillas will cause this casserole to turn to mush. The corn tortillas are needed here. You may hate corn tortillas in other ways. I do too. However, in this casserole you may find that they are not at all offensive.

I think a big reason for me is I grew up on homemade corn tortillas as a kid cause my godmother is Mexican. Now any ones I have had since are just gross to me. It sucks when food gets ruined for you! lol

I am cooking on the fly and I am getting the job done. I don't like to stop and "get camera ready". So this is how it is. I will do chats from time to time. You can enjoy me in those. No This requires tortillas. If you use biscuits it is not King Ranch Casserole. It is something else. Honestly I feel like biscuits would not cook properly and become gummy and gross.

How do you recommend shredding the chicken without turning it into a paste?
My chicken never turns to paste. You pulse the machine or run it on low. It only takes a minute for it to shred nicely.
If I make 3 casseroles, can I freeze them for later? Also if frozen, what temp. to bake, for how long?
