I've been making my bread exactly like this for over a year. Every time, I've got a sly smile on my face while I'm doing it. Can't believe so many woman have been kneading for several minutes, over and over, for years, unnecessarily.
You know, I think, kneading is for something. Now we make 1 loaf and eat it for a couple of days. My grandma used to make bread for several weeks, and they had to knead it vigorously. My thought is that it helps preserve the bread? The bread should have been able to spring back when pushed down, not like nowadays - you squeeze it, and it sticks together. That would be a shame for the old breadmaker.

This process seems logical, but when you put the cast iron in the oven, the oven should be at the same temperature. Otherwise, the dough will absorb it and the bread will be very bad. I’ve been making a similar boule and it comes out perfect every time. The recipe I use says to wait 6 hours before baking. Good luck.
