Hi~, I am Joconde.
This cake is a whipped cream cake with plenty of fresh fruit.
I applied stable whipped cream added mascarpone cheese and gelatin between the layers of strawberries, kiwi, mango, and bananas.
The sponge cake has an orange flavor because of the orange juice and zest.
So it was really good as a fruit cake sheet.
you can bake the 6-inch cake with this recipe. Without reducing the proportion, it came out as a less tall 7-inch cake
You will get two sheets 1.5 cm thick or four sheets 1cm thick.
This cake is so yummy and fresh.
It also looks good so it made me feel better.

Ingredients
♥︎ Sponge cake (18cm)
20g melted butter
35g orange juice
4g orange zest
90g cake flour
3 egg whites (105g)
3 egg yolks
♥︎ Whipped cream for filing
50g Warm heavy cream
25g sugar
2.5 g gelatin
70g Mascarpone Cheese
150g heavy cream
3g Kirche (can be omitted)
♥︎ Whipped cream for icing
150g heavy cream
12g sugar
♥︎ Sugar syrup
60g water
15g sugar
3g Kirsche (optional)
♥︎Fruit filling
Preferred fruits such as strawberry, mango, kiwi, and banana.

딸기 키위 망고 바나나 여러가지 생과일과 생크림 케이크라니 정말 상큼하고 맛있을 것 같습니다. 마스카포네와 젤라틴이 들어간 생크림이라서 더욱 식감도 좋을것 같아요.

This looks so yummy 😋 The only thing I would change is I would add white chocolate ganache to the whipped cream frosting instead of the sugar to not only add the sweetness but also to help stabilize the outside cream. I live in a warm climate where regular whipped cream would melt in a very short time outside of a refrigerator. A tiny bit or gelatin can also be added to stabilize it. Maybe a little bit of lemon jello dissolved in water and added to the whip cream would make a yummy lemon whipped cream for the outside and add a little something extra to the flavor of the cake😉👍

I'm making this rn, I just have an advice for anyone trying this.
It is delicious, but I'm just in the 2nd layer of fruit and I don't have any whipped cream anymore, and I was trying so hard to use just the necessary amount but is not enough, so it's a bummer, now I have to stop the process half way and make more cream. Other than that, totally worth it 👌
