Hi~, I am Joconde.
It's surprising that I still haven't completed the requested cake.
I think you've forgotten now even after making requests
However, I will continue.
This cake is another recipe for the Black Forest that has been requested a lot.
Actually, I uploaded a Black Forest video a long time ago.
So this time, I made it mousse cake rather than the normal recipe.
I layered chocolate mousse, cherry jelly, and mascarpone mousse, and then topped with chocolate mirror glaze.
Oh, it's really delicious.
For the cherry jelly, I used the delicious Italian organic frozen cherries I had.
Compared to ripe cherries, it is sweet and sour. Ripe cherries were used only for inserts.

Ingredients
♥︎ chocolate mousse
2 yolks (Please measure it to about 32g.)
12 g sugar
50 g milk
70g Dark Chocolate (Callebaut 57.9%)
110 g whipped cream
2.5 g gelatin
♥︎ cherry jelly
160g cherries (both frozen or raw cherries)
50g sugar
10g lemon juice
1.5 g gelatin
♥︎ mascarpone cheese mousse
45g milk
40g sugar
4g gelatin
95 g mascarpone cheese
135g heavy cream
♥︎ 1 Chocolate Genoise sheet cut into 1.5x14

♥︎ Chocolate for decoration leaves
It is 54% Callebaut Dark Chocolate.
♥︎ Clear acrylic mousse ring
Made to order on the Internet. In the video, it was written as 15cm, but frankly, the inner diameter was 14.8cm.

Hii can I ask you if your gelatine sheets are also 5gr each ? I don't know how to exactly mesure it's a bit weird.. on my package of gelatine it's written that it's 5gr each sheet 🤦🏻♀️😂 while I see videos on youtube writing "1 sheet = 1.5gr so add 3 sheets" 😳
Should I maybe mesure them for each time with the scale when they are soacked ?

You can make mousse without gelatin. It is a little more time consuming but it is well worth it.
@@apaiiyui8488 why not try weighing the sheets? try putting on as many sheets as you need on a scale, divide the weight by the amount of sheets if a single sheet is too light

큰 마트 베이커리 가면 블랙포레스트 케익 10~15유로 정도면 사먹을 수 있어서 가끔 사먹는데 젤라틴 없는 케익이었거든요! 그래도 넘 맛있어서 좋아했는데 원래 레시피는 젤라틴이 많이 들어가는 거였구나~~ 카페 가면 비슷한게 있나 봐야겠어요, 넘 궁금해요!!

Hi Jondone, how can we store the cake after glazing? Should we put them back and froze it or chill it? My cake running water out from cake when putting it in cool regular rack in the fridge. Thank you for all your advice!
