So the protein, carbohydrates and fat quantity remains same, as before but only moisture content increases. So 50g soy becomes 150g and 26g initial protein becomes 26/150=17.33% Tofu contains some fat, more than soy chunks because soy chunk is by product of soya oil manufacturing. The leftover pulp contains negligible fat and thus nuggets or defatted soy flour is made from it.
