    One of the best chateau vlogs I have seen for a long time , I have always gone mushroom 🍄 picking in Sussex in the U.K. but normally not until the end of September

    Waco here. My mother would place water filled gallon water jugs or milk jugs in the bottom of her freezer in case the power went off for several days. The food usually stayed frozen, but for four or five days the food would not spoil.

    so happy to see you all!! mushroom risotto!!!! feta butter onion or shallot add mushrooms , brown then add risotto till transparent, then add white wine till white, till tasty..then mushroom stock cubes from switzerland, adding little by little stir and stir, 20 min. Parmesan to make it stringy.....tastes like it has just been picked....giggles from a happy wife , mother , husband and father. you all are in my thoughts, for all good things to be on your path.

    As I sat and watched this video, I realized I was smiling. It was such a good feeling to see you all outside with the children--my, how Juliette has grown! The mushrooms looked absolutely divine!!!! And when Marc was explaining what ingredients were in the Mushroom Risotto, my mouth was watering! How wonderful to see something like this come to fruition after several years of waiting for a good crop. Loved this video! So happy you are all well. Missed you!!!

    way back when when manor houses were self sufficient, the gardener had a long bed of mushrooms below a shelf below ground level in the long half greenhouse lean twos that were also used as cold frame rooms.

    Seeing Clement nearly switching off the freezer reminded me of one year when we went on a family holiday only to return to a stinky kitchen. Our then 7 or 8 yr old son saw us going round checking the house before we left shutting shutters and switching things off and thought he’d help by switching off an extension lead, sadly powering the freezer ! Not a nice thing to come home to, phew smelly.

    A handy tip about freezing. We grow a lot of our own vegetables and fruit but always put them in bags straight away, but I’m going to try your method. Thankyou.

      We found that freezing all veg and fruit loosely on trays (and always dry) before bagging really helps when you come to get them out later on. I think it must be how it’s done commercially. Hope it helps!

    Your vlog was filmed so beautifully. I had no idea that you could grow your own mushrooms. I will definitely consider doing that. I had to laugh when I saw the hen with her chickens watching what you were doing. Risotto looked wonderful.

    Welcome back. It’s not lazy harvesting, just efficient. Love how the chickens always seem to be supervising everything you do🤣🤣🤣Clement and Juliet are growing up so quickly and still adorable.     We use chicken stock with dried porcini mushrooms, wild rice and even some bacon when we make our risotto in addition to your recipe. The small amount of wild rice makes it taste a bit nuttier.

    Love seeing you all in the garden bringing the food in, it reminds me when my family used to round the allotment with my dad to help gather in any produce that he had grown, my dad always used manure and it stank so bad that we used to hide in the shed to try to get away from it.

    I bet those mushrooms are yummy! Here where I live in Indiana, we have morels. One summer I was mowing my backyard and found a cluster growing right there, a few feet from my door. I stopped my mowing and harvested them right then. They were delish!

    Great vlog! I've heard about a fellow that bought a property with a cave and turned it into a mushroom growing business. Perfect temperature and darkness, apparently.       I never used to like mushrooms Pam - but I love the wild ones and the shiitake ones now. They seem very different to the standard supermarket ones!

    Those are wonderful, luscious and large Shiitakes you have cultivated! Quite a coincidence, I just made chicken mushroom risotto yesterday. I use Baby Bella mushrooms since they are less expensive here and will be cut up anyway. If not for that, after watching you make and eat it, I’d be headed to the kitchen to make some as it is one of my very favorite dishes! Loved watching Clement helping you with the harvesting; such a cute and helpful little boy! 🥰

    Growing your own food does make you realise just how much you would need to grow to be entirely self-sufficient with veg/fruit! I've been trying every year to increase production, but still fall short and it takes so much energy and time to grow/harvest and store! Congratulations on the mushrooms. Do you plan to add more logs to give yourself a larger harvest for the winter?

      Absolutely! Yes we do plan on adding more logs because we've just had an oak fall actually!

      I agree. We grew all the produce we ate for the year, except potatoes. Preserving and proper storage took as much time as growing and picking. At peak harvest, the whole family had to pitch in. My mother did an incredible amount of work for us.

    Hope you got more harvest out of it. You also could dry the mushrooms and make powder out of it. That gives a good umami flavour to sauces and Asian dishes.

    great update; wonderful production of champignons! now, will they continue to grow there, or will be necessary to spread more spores???!....it is so interesting that they will just grow on a log ....we normally have them growing in a sort of mulch soil (cultivated). Pepper is such a lovely pet and caring for your children♥

    Oh I'm so jealous of that beautiful mushroom crop!! They're probably my all time favourite vegetable. I'll happily eat them morning, noon and night!! We don't get a lot of wild mushrooms here, probably because of the fairly high humidity. I'm exploring getting a mushroom farm, which is petty much a DIY mushroom kit. They're supposed to be foolproof, but we'll see! Marc, that risotto looked so delicious!!! Much love and big hugs xxx

    I’ve grown Shiitake Mushrooms for 4 years now. They are marvelous blanched in boiled water for just a few min, drain then pop in the freezer. I’ve dehydrated them as well and sometimes eat them like chips or rehydrate them in a bit of boiled water and use the “stock” for the liquid in what ever recipe I’m doing. That’s an awesome crop 👍

      Have you ever tried not blanching them? I just ask because we found that blanching made no difference with freezing other veg so we didn’t with these but would love to know the difference!

      @@Chroniclesofrosieres no I haven’t. I will try it and see how it turns out.
      I retract the “few minutes” it’s only a few seconds that I blanch them. I have found that with blanching the part where the stem is isn’t as tuff when you go to use them. You can also take the tuff stems, put some boiled water on them, let them cool then put them in the blinder. Blind well then freeze in small containers or ziplocks. Makes wonderful soup but you can also use it in just about any recipe that pair with a good mushroom.
