Dryad's Saddle: A Versatile Edible Mushroom

In late Spring, through early Summer, most foragers are out looking for morels, ramps and tender young greens.
But let's not forget about one of the best and often, most overlooked, wild edible mushrooms: Dryad's Saddle AKA Pheasant's Back. This giant fungi grows directly from wood in a matter of days. If you're not quick, they can get too tough to eat fairly quick. However, the reward for those who get to them within a few days is working with one of the most versatile wild mushrooms in the kitchen.
