  • Home-made Mozzarella Copy-cat
    Ingredients
    * 400 ml of Fresh or UHT milk
    * 1 pack of 175-200 gr Cheddar Cheese, grated.
    * 60 grams or 4 tablespoons of Tapioca flour, dissolve into 100 ml of water, stir well
    * 1 tablespoon margarine
    Additional Notes
// Yesterday I made a fried pizza using 500 grams of wheat flour, added with Bolognese-sausage sauce and this cheese copycat as its stuffing.
It takes about 180 grams of Cheese to fully stuff up 34 pieces of Fried Pizza at 25 grams weighs each.
I also made another fried pizza with a bigger size at 35 grams per pizza pieces, then I got 26 pieces from a single recipe.
Yeah, I got a little more result because I added a handful of flour into its dough for the original dose only gives me a runny textured dough.
For the use of the cheese, it remains the same, it takes about 180 grams.
The point is, this 700 g of cheese is enough to stuff for 136 pieces at 25 grams weight each (Note that the Pizza filling that I made is not full cheese, sure I’ll need more if it’s for the full cheese Pizza). Or it should be enough for 106 pieces of pizza if each of the batter's weight is about 35 grams. It’s surely so much ain’t it …
If we still have some leftover from the cheese, we should pack it tightly in a closed box or plastic.
Then immediately store it in the freezer, make sure it’s not stored in the fridge.
This way we can finely preserve the taste and texture of the cheese.
Once we’re going to use it.
Just take out from the fridge then leave it at room temperature until it can be easily sliced.
The way to use the Mozzarella Pizza is best to be sliced into pieces, instead of being grated as like Cheddar cheese.
Because the texture of this Mozza Cheese at room temperature tends to be soft and fragile.
So, we can slice it into rectangle-shapes, thin slices or boxes.
It’ll melt and slightly stretch out when it’s exposed to heat.
We can grate this cheese if it's in a slightly frozen state.
So, after storing it in the freezer then left it for a while and wait for its texture to get slightly hard, this way we can grate it.
The dose of cheddar cheese is up to our own taste.
For a stronger cheese taste, we can add up to 400 grams of Cheddar Cheese.
I only use 200 g for this recipe because I took the most economical measure but also to get a good juicy taste.
Hopefully this will be useful …
