Soya Chunks also known as textured vegetable protein is a great vegetarian substitute for meat.Today I will cook a super quick soya chunks stir fry recipe. There are some days when we do not feel like spending a lot of time in the kitchen so this recipe will come to your help on those days. The best part is this will be loved by even those picky eaters.

Ingredients required for making this easy soya chunks recipe -
* Soya chunks (soya badi) - 150 gm / 2 & 1/2 cups (measured when dry ). Soya chunks are available at any Indian grocery store. You can even search them online.
* Capsicum (bell pepper) - 1 large or 2 medium / 170 gm or 6 oz
* Onion - 1 medium
* Ginger - 1 inch length/1 tablespoon chopped
* Garlic - 3 large/1 tablespoon chopped
* green part of green onions - 3 green onions or you can even add chopped coriander leaves (dhaniapatta)
* Coarsely crushed black pepper - 1/2 teaspoon (adjust according to your preference)
* Dry red chili (optional) - 1
* salt - as per taste (remember the sauce is already salty so add less. You can always add later)
For the sauce -
* Soy sauce - 3 tablespoon
* Dark soy sauce - 1 tablespoon (optional)
* Tomato Ketchup - 3 tablespoons
* red chili sauce / hot sauce - 1 teaspoon (can add more or less according to your preference0
* Sugar - 2 teaspoons
* Oil - 4 tablespoons
* Water - 1/2 cup
* Corn starch/cornflour - 1tablespoon level
* You can even sprinkle little garam masala powder at the end (totally optional)

I love how you explain not only what you are doing, but WHY you are doing!
ie. Don't slice onions too thin *_because you want them to stil have character after cooking_* ...
ie. add dark soy sauce *_for the colour_* ...
ie. stir the corn starch slurry *_because it settles at the bottom_* ... etc.

This was a lot better than l expected, pleased to say. The only thing l would do differently is sauté the soya chunks first as mine took a long time to brown, so most of the vegetables were soft and dissolved. I had squeezed as much water out as l was able, maybe my pan was too small, l ended up with a lot of soya chunks. Still it was the best soya chunks recipe l’ve tried. l’ll look forward to your other ones. Thank you, Bumbi. 😊

Thank you for the recipe. We enjoyed eating it but even though I only added 3tbsp of soya sauce it was really salty. Tasty but salty. We will add littler soya sauce next time and enjoy it again!
It sometimes depends on the brands of soy sauce. Some of them are quite salty. Probably next time add only 1 tablespoon, do a taste test at the end and add more if required.

So happy to hear that you liked it. Cornstarch (cornflour) gives a nice shine to any stir fry dish. You will observe that glossy appearance soon after adding cornflour slurry and it dissolves easily compared to plain flour. Thanks for sending your feedback.

Regular light soy sauce and dark soy sauce
Nice recipe,tried it today and it tasted really good,thank u.have 1 question though.how do we make the soy chunks have a meaty texture?when i buy it from a specific restaurant near me,it has a meaty texture but when I cook it,the soychunks texture is springy,quite similar to the texture of fishball

No don’t add maida/rice flour. Just skip cornflour

Potatoes take a long time to cook. This whole process took me hardly 6 minutes so potatoes are not a good option for stir fry recipes 😀.
This is a healthy stew without any fixed rules..
Hi, I bought a bag of this soya chunks for my vegan daughter and son in law, read the ingredients and it says besides few other things that it ' may contain ' milk. Can you please tell me if soya chunks contain milk.

I haven’t ever heard of soya chunks containing milk. I don’t know why it’s said like that.
@BHappy they say that because it’s usually processed at the same factory where milk products are processed. So companies like to cover themselves particularly for allergens.
Unless the people you are feeding it to have an allergy, it will be fine.
I have been vegan a very long time & know if it’s not in the actual ingredients list, then as for vegans, it’s no problem.

You will get it online or at any Indian grocery store.
Our quail chicks were cheeping and cheeping, they wouldn't stop unless we stayed nearby and talked to them. But I've been playing them this video on loop and we didn't hear another peep out of them! The computer ran out of charge and they're calling again! I'm going to plug it in and leave it on loop for them overnight. I've heard that UA-cam likes it when videos get a lot of view time, so I hope this helps your channel haha!

You will either get it any Indian grocery store or even online.

What is soya chunk ?
Soya chunks are made using soy flour that has been ‘defatted’ or the oil is removed. They are the byproducts left after extracting soybean oil and have a rough texture when left dry. The texture quickly changes to soft and spongy as soon as submerged in warm water or added to gravy.

So I followed the recipe below the video (after watching it) and added oil into the sauce.... As listed:
For the sauce -

* red chili sauce / hot sauce - 1 teaspoon (can add more or less according to your preference0
* Sugar - 2 teaspoons

* Water - 1/2 cup
* Corn starch/cornflour - 1tablespoon level
But there is no oil added in the sauce in the video ! :O So now I can start over
