I'm not sure the name for this technique but with how loosely fitting the yarn is, I can assume it's pretty great for warmth, but can't stop wind at all. Trapped air keeps you warmer after all. As for knitting or weaving being different. That's very true. This would have less elasticity than knitting and more breathability than knitting.

They can go in the washing machine. Not sure you can knit/crochet this type of blanket
