Dude I think you may have stumbled into a niche with build your own wire harness kits. Id order them if they are competitively priced. Id be interested in engine harness kits too. I've never seen DIY kits and I've built 8-10 harnesses. Id build more if I could order a "V8 kit" and have most everything I need. You could even do different connector sets in a drop down menu for different engines and sensors. I think it would be a great addition to your business. It's an untapped market. Id be interested in it as a new business option myself.

I know, when you said that a light bulb went off in my head. For me it's not building the harness that is the problem, its gathering all the parts so you can build it from start to finish that is the issue. You have enough experience to put together accurate kits and you could make videos on how to do various things involved in the building of a complete harness. Even a guy like me that has built a fair amount of harnesses learns something from your videos. In particular I like the way you did the flipping of the leads around the splice. Built in strain relief, nice!
