- People love to hate on Giada's accent just as much as they enjoy criticizing Gwyneth's parenting practices. They're both polarizing characters, despite each woman's success in what seems like all of her endeavors - TV, movies, restaurants, cookbooks, lifestyle brands. Is the hate warranted? We decided to test see for ourselves, by way of carbonara.
Is pasta a fair test for how well you like a person? Maybe not. But a person's take on the classic Italian dish can very telling of his or her cooking style and personally, we say.

i hate when they do these unfairly. you should have used Giada's classic version against gwyen's classic version, not giada's americanized version.

Well because Gwyneth's wasn't her recipe it was just any generic recipe. They even said Giada had 4 variations of carbonara, but she for sure knows how to make the classic version.

Giada has probably 60 different carbonara recipes. For the purpose of this video they took her popular chicken version. Doesn't mean she can't do a traditional carbonara. And if you add bacon to big mac it's still a big mac. If you add shrimp to carbonara it's still gonna be a carbonara with extra shrimp. It's not gonna change name just because you add or remove an ingredient. People are so critical for nothing.
If you looked at the beginning it said giada has 4 recipes for carbonara but the chicken one is most popular so that’s the one they did.
@@xzgun100 carbonara doesn't contain basil, parsley, garlic, cream or chicken. It's a different dish she's chosen to call carbonar.
Tbf, what triggers me the most in this video is how the first spaghetti has been cooked. They haven't been stirred properly, I can tell because there are a few bunches of noodles stuck together and that is bad because you gonna have a very thick super noodle which is raw inside. No good, no no.

Whoever boiled the spaghetti for those two dishes broke the spaghetti in half. That's a no-no.
So one is fake Carbonara (because it has cream) and the other is a glorified Cacio E Pepe? Sounds about right.
Alex Ngan no, the second is an actual pasta carbonara. Cacio e Pepe creates its sauce by mixing pepper, butter and olive oil with cheese. A carbonara creates its sauce by mixing pepper and egg with cheese.
Other than using pancetta rather than guanciale (which is acceptable), Gwyneth's is a true roman carbonara. You should only have 5 ingredients guanciale, cheese, egg, pasta, and pepper. Cacio e Pepe has no egg or meat... So if you don't think either of these counts as Carbonara, what does?

Gwyneth's is the one closer to the traditional one, though it's better with guanciale rather than bacon.
Which is ironic since the one known for her "italian" cooking literally made it in a completely different way.

Gwyneth obviously has more Italian-y carbonara recipe but oh god that looks so dry Imma pick the first one cause there is nothing I hate more than a dry or little to no pasta sauce.
They should have added another egg for that much pasta, but at least it doesn't call for cream.

Both extremely wrong, but the closest one is Gwyneth's.
How to do a proper traditional carbonara..
Ingredients :
Egg yolks (about 2 per person)
Pecorino Romano grated cheese
Pepper
Guanciale (pork cheek)
Spaghetti or thicker long pasta (not fettucine, tagliatelle or linguine)
Pasta water (the water that was used to cook the pasta
.. so basically, you start by boiling your water. You then prepare and whip your mix in a bowl : egg yolks, pecorino cheese, pepper.
After which you would have to start cooking the guanciale in a medium-low heat, with no added fat to the pan. If you cook it with high heat, it will release too much flavour, making it it too strong and overpowering for the other flavours of the dish.
As you add the pasta to the water, when it's 2 minutes away from being ready, save some of the water in a glass. Get the pasta out 1 or 2 minuted prior to the indications on the box (so it will be somewhat al dente).
You should then sauté the pasta in the pan where the guanciale is.. fast fast, just so you can get the oil all over the pasta and get the pasta really hot for the next step.
You may then add the very hot pasta to the mix, in its bowl. Mix everything properly and add some pasta water to it, to make it creamier. You may now serve it and add some additional crushed pepper to your liking, in your plate, and add some extra pecorino. I personally don't add salt to my carbonara, cause the cheese and the meat are both very salty, and the pasta was cooked in salted water.
Et voilà. This is how we do it in Italy!

no cream in carbonara... also typically in Italy we use guanciale and not the pancetta for the carbonara.
Unfortunately, the import of guanciale is banned in the US since the jowl is not a recognized cut for pork. There have recently been a few domestic attempt at curing pork jowls but I have yet to find a good one. Until they either figure out how to do it well or change the stupid antiquated laws... pancetta is the best bet. Certainly better than chicken... Giada? Ma cosa combini?

At first it was pancetta. Guanciale is newer and trendier, but not original.

My carbonara is some meat fried to crisp..pasta starch in,salt,pepper..in a separate bowl,several egg yolks with some salt,pepper,parmesan mixed together..off heat,throw the yolks mixture into the pan gradually & stir..add more parmesan..done!

Both recipes failed as a Carbonara, although Gwyneth's is closer. If I were judging the two dishes on their own merits, I would say Giada's looks a lot more appetizing.

I wouldn't eat either version. But I feel like at least with Gwyneth you wouldn't have to listen to incessant over-pronunciation of every Italian and/or vaguely Italian-sounding word, so I'll go with her.
Giada makes recipes for home cooks, she’s a TV personality star! Her recipient for American home cooks are dumbed down and hard to mess up. She studied at the cordon bleu in France! She knows how to make a proper carbonara.

ryan tabb actually, if done properly, the heat from the pasta will temper the eggs without further cooking. But you obviously need the freshest eggs you can find and the pasta needs to be added immediately after being cooked. Also, many recipes call for a ratio of one yolk per person plus one whole egg, because the yolks temper faster and give the sauce a lot more... Thickness? Texture? Something delicious?
