Hi Francine, I finally tried this recipe and it was easy and delicious. The only thing is that the tapioca balls clumped together. I didn’t stir to mix before cooking. Maybe I should I have?
That’s wonderful that you got to try my recipe Laura. Yes the tapioca balls can clump together because the starch softens when they cook. I like to scatter the tapioca pearls when I put them in the Instant Pot so they are separated and don’t stick together. Happy New Year, too!
Tried but didn't like it. 1) Way too much water. 2) Not creamy. 3) messy. 1) replace coconut milk with coconut cream. 2) replace 4 cups of water with 2 cups of milk 3) Instead of 10 and 5 minutes, set 2 minutes on HP. Then unplug the cord and wait 15-20 minutes for the float valve to drop. 4) Add a cup of hot water if too thick. 5) eat with some crushed peanuts.

I agree releasing the pressure by turning the steam release value does make a bit of a mess, so thanks for sharing your method! Never thought to eat with peanuts, but might give that a try one day.
