Finally made the Italian Pasta Salad after getting the hand mixer and the chilly. Was missing a few thing like the Capocollo , replaced provolone with smoked gouda (didn't have it had my local store), no basil, and used dried thyme instead of fresh (coz really didn't want to buy bunch of thyme i wasn't going to use). It turned out amazing! and a LOT! Like I filled up whole large mixing bowl of salad. I was worried that the dressing won't be enough because I poured like half of it just to mix with the pasta and having like this whole large mixing bowl almost overflowing at the end I thought it might be lacking but no the balance of this recipe is so perfect. The dressing was just enough flavor everything without being too much. Biggest issue with salads for me is always too little or too much dressing. Also as someone who super sensitive to sour taste (its the single taste that override everything else for me why I don't like squeezing lemon juice over things because I will literally only taste lemon juice and nothing else) it was so perfectly balance it was amazing. Fyi costco like deli meat was definitely best deal by far lol, local market sell them at like $6+ for like 4 oz, I did think i ended up with a bit too much clump together meat in there ironically even though i love that stuff XD

Tip: When you have a lot of cherry tomatoes or olives to slice in half, place them between two dinner plates, and then run your knife between the plates. PRESTO! A bazillion cherry tomatoes sliced into perfect halves, in one shot. Aside from being a huge time saver, It's also safer than doing them by hand.
