    For the cucumber in the raitan sauce, you can split the cucumber down lengtwise and use a spoon to get rid of the seeds. Helps reduce moisture.

    Thanks to you I bought that microplane and the benriner mandolin and love them both. After the purchase of my first full kitchen aid stand mixer, my hubby now associates kitchen tools as tools. And having the right tool for the job makes the work easier and more likely to get done, ;) 😂
    (I.e. better eating)

    I learned today to leave my braised meat to rest 30 minutes. Thank you! I make Italian beef with chuck roast at least once a month. In the slow cooker. And I cook it until I pull it out. I know this tip will help, makes total sense!

    Here’s something I really enjoy that I think you may as well, it’s my interpretation of Zhoug:
    Ground jalapeños
    Grated garlic
    Cumin powder
    Salt
    Mix into paste, store sealed in refrigerator
    How I use it in pita sandwiches:
    Make a salad of diced roma tomatoes, red onion, and seeded, mostly skinned cucumbers.
    Lightly spread mayo on inside of pita half, then follow with spreading Zhoug over the mayo. Stuff pita with slice of Swiss cheese, a couple of slices of hard salami, and then a couple of thin slices of boiled ham. Top with salad and enjoy.
    Also good as a condiment on Falafel sandwiches. Stuff half a pita with prepared falafel patties, top with salad. Drizzle tahina sauce over the top, I like a generous amount, then garnish with Zhoug.

    You made one of the variations of tzatziki since you got the base (greek yogurt, cocumber and garlic) and coriander is not uncommon. Greek pronunciation of gyro is "yeeroh"

    Brother, I need your help. I've tried all kinds of ways to do chicken drumsticks and none are a home-run with my family. So far butterflying them before grilling and stewing them have been tolerated, but I can't get them excited about them. Any drumstick specific recipes that are killer would be appreciated .

    With the Shoyu chicken can you cut the bones out and just throw them in the pot with the de-boned thighs? Will that affect the cooking time a lot? I like the contrasts in flavor between the rice and the meat and when I have to cut around a bone I always end up just soaking everything together. As opposed to like mashed potatoes rice has more of a subtle flavor.

    you have a stove top in the back, but elect for the propane burner. Can you help with rationale? I would do it because my stovetop has less than optimal temp control (20 year old gas top), but curious why you chose to do that.

    Hey Sonny, amazing video as always. I know I can always experiment to find my answers but since I'm at my laptop and not my kitchen.... I rarely have ginger on hand. I hear it freezes well so I plan keeping some going forward but I *ALWAYS* have a large jar of garlic-ginger paste in my fridge for butter chicken and mongolian beef. Any reason why I couldn't go the lazy route and use the paste in the Shoyu Chicken rather than fresh garlic and ginger?

    Can you experiment with an amaretto chicken recipe with puff pastry? My mom made it when I was a kid and it was amazing but she lost the recipe. She’s tried to remake it. I’ve been trying to but not having much luck.
