Bison Chili

  • We've had a pack of Bison burger in the freezer for a while and were looking for something to use it with other than hamburgers. This chili turned out very tasty and, surprisingly, NO HEARTBURN afterwards! Is that the fault of the bison meat? Hmmm....
    Ingredients:
    1 32 ounce can of whole tomatoes
    1 32 ounce can of tomato sauce
    2 tablespoons chili powder
    1/8 teaspoon ground cinnamon (optional)
    1 pound ground bison meat (90% lean)
    2 tablespoons beef tallow (or your choice of oil for browning meat)
    2 teaspoons salt to taste
    1 red pepper, diced
    3/4 large yellow onion, diced
    4 cloves garlic, diced
    1 can dark kidney beans, drained
    Directions:
    1. Over medium high heat in a large skillet, melt beef tallow. Add bison meat, 1 tablespoon of the chili powder, and salt. Stir together and brown the meat. Remove from heat and set aside.
    2. Add all the ingredients to the crockpot and cook on high for the first hour. Turn down to low and slow cook for 5-6 hours.
    Serve over noodles and garnish with cheese. Add a slice of cornbread and you got yourself a great meal!

    LOL! Good joke! LOL! This looks good. I have never had bison. Nothing like cornbread with chili! We are going to get a few days of winter weather again here in sw Va. I think a pot of chili will be what is on the menu! Hope ya'll have a great week! God bless!

    Started cooking my ground beef recipes with bison last year when my husband’s cardiologist told him to cut red meat from his diet. Bison doesn’t have the cholesterol that beef has and it has some healthy ingredients that beef doesn’t have.

    The chili amount of powder and tomatoes are the cause of the heartburn, not the meat. I have heard of people adding baking soda to cut the acid but have never tried it. The caspian in the chili powder is the culprit. Tomatoes are acidic. Sometime try using canned "Italian San Marzano peeled tomatoes "in your chili. I use Cento brand as that is what my grocery carries but there are a cople of other brands. I normally just use it in my spaghrtti sauce but one day making chili I found it was all I had. The difference is my chili was amazing. I always make enough to share with my daugter and her family. She called and said " Mm, you outdid yourself on the chili tonight." Many of my friends are now using it and rave at the difference. I squish the tomatoes as I add them to the chili and then have no big chunks.

      I used the San Marzano tomatoes and less chili powder than I normally use. We did notice a total lack of heartburn from this chili. I think you're on to something!

    Bison is good for your health, better than beef. In terms of nutrient content, bison packs a good amount of several essential nutrients, including protein, iron, zinc, selenium, and B vitamins.

    Thoroughly enjoy watching your videos, including those with your sons. Have tried several of your recipes and haven't been disappointed. Expecting some cold weather here in Colorado this weekend, so am planning on trying your bison chili. I love your commentary; you seem very comfortable in front of the camera. The Irish bean joke--very funny and unexpected. Ha, ha, thanks!! I know you're keeping the promise made to your mom by continuing with the videos, but you also seem like you're having fun doing them.       Yes I did. The plug wouldn't have worked--it was the Brit-style plug. I feel like I left a good friend behind. LOL!

    Hi Steve I've eaten Buffalo burgers along time ago was really good I bet this will be good I make my chli different I use red chili powder like Bueno chili powder I'm from new Mexico and I make red enchiladas cut up pork meat I make red chli with that and home made tortillas take care God bless 😊

    Sweet dreams. I know that you will because every time I eat bison I always feel fed, full, fat and happy and then sleepy. Once I fell asleep and dreamed that I was laying on the ground and looking up at the stars. Just as the bison do when they “
    Free Range”. ( Did you notice the distinct aroma of the meat as it browned and how different it is from beef? ) Sleep well. 👍👍🦁✨✝️

    So do you know a guy who knows a guy or are you buying it at your local market?
    Most people don't seek out bison because it's so dry. Also you risk over cooking. Enjoy!

      I believe the RMR bought it at our local Whole Foods market. No worries about dry meat in the crockpot!
